Blueberry Pancakes with Peach Sauce

The teenager asked for pancakes this morning. I knew that I had some blueberries and peaches that I needed to use up fast. So I added the blueberries to my basic pancake batter and made a quick "peach sauce," inspired by Marisa's microwaved fruit sauces/syrup.

Basic Pancake Batter
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 2 tablespoons sugar (you may want to use 3 if you like your pancakes sweet)
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 1/2 cups milk (sometimes you need to add a bit more)
Mix all the ingredients together. Once all ingredients are mixed well, add some blueberries. I added about 1/2 cup.

Heat some oil or butter in a pan and pour a small ladle of batter into the pan to make a pancake. Cook until bubbles form; then flip the pancake and cook until the other side is golden brown.

Warm Peach Sauce
  • 3 very ripe peaches, skinned and cut into small chunks
  • 1 teaspoon (or more to taste) agave nectar
Microwave the peaches for about 2 to 3 minutes until they are soft and there is some liquid. I suggest starting with 1 1/2 minutes and then adding time as needed. Once the peaches are the desired softness, add about a teaspoon of agave nectar and stir.

Before serving, dust the pancakes with some powdered sugar. Serve with the peach sauce. The teenager and hubby also added some maple syrup to their pancakes.

  3. Oh boy, another delicious dish! Those pancakes look like they are straight out of a culinary magazine.
    I really like adding fruit toppings to my pancakes, but I have to say my favorite pancake is chocolate chip with butter and syrup on top, plain and simple!

  5. Oh I've never met a pancake I haven't liked (not a waffle girl).

    This place by my parents' make a great blue corn pancake.

    My all-time fave is this local place that has Coconut Banana Macadamia pancakes. They are to-die-for ...

    Oh and it has to be maple syrup and I have to have a glass of cold skim milk to accompany my pancakes. I can't tell you how many times I have smuggled organic milk into brekkie joints via sippy cups! lol

  6. Blueberry and peaches sound like a heavenly combo! My favorite pancakes are the nutty, grainy ones that are still pillowy soft and not too sweet. I like a little bit of yogurt/buttermilk in the batter too for tartness. My favorite toppings include cinnamon, nut butter, fruit, and pure maple syrup. Yum! Now I'm craving for some ;)

  7. Pancakes = deliciousness!!!! I could go for a short stack of those right about now.

    I've always been a buttermilk pancake type of girl. As for toppings. I'd like some fresh fruit, but I'd go for just butter and long drizzle of syrup. ;-D

  8. i had pancakes today too! oatmeal ones with ficoco spread. pretty darn good. i love pumpkin pancakes. and chocolate chip ones. but i've never had a pumpkin chocolate chip one!

  14. ohhhh my boys LOVE pancakes and I have just gotten back into it only now I am having fun making them from scratch instead of Krusteez.

    I made a batch once topped with fresh ripe pears, carmelized walnuts and this cream sauce that is to die for!

    lately though it's been a banana/oat blend and it's sooooo good too!

  18. Great looking pancakes! I'm sure they taste great, too! Don't eat too much pancakes these days but remember having my fair share of Swedish pancakes with lingonberry butter and syrup at a local restaurant in my college days...
