Meal Recap and Weekly Meals (9/22 - 9/25)

Recap of Last Week's Meals


Our favorite meals last week were the chicken kimchi stew and the tomato soup with rosemary garlic parmesan croutons. The fried rice was good too, but there are no pictures... Unfortunately, "Salad Friday" did not work out once again. I had a work meeting on Friday afternoon that ran late, and I realized that there was just not enough time to "experiment." Plus, honestly, I just hadn't planned well enough. I had a head of cabbage (which I ended up sauteing over the weekend to go with a roast), but I didn't have a detailed plan of what to do... Instead of cabbage salad, we had a simple spinach salad and some pasta with sauteed garlic, tomatoes, and Parmesan cheese. Even though it wasn't what I had planned, it was good... :o)

So here are this week's meals:

Tuesday: Spinach salad and salmon cakes.

Wednesday: Carrot/ginger soup. I used to make a carrot/ginger soup a long time ago, but I'm not sure if I still have the recipe. If not, I think I have seen numerous versions on other blogs recently, so I'm sure I can find a recipe. I'll also make some homemade croutons.

Thursday: I think it's time for pizza again. I'll make some more homemade whole wheat pizza dough and experiment with the toppings.

Friday: It's "Salad Friday." I somehow think cabbage salad is not quite meant to be at this point.... So I'll make my Taco Salad.

Question: I have asked this before, and I loved all your answers and got many ideas... So here we go again: What's your favorite salad at the moment?

  4. That taco salad looks AWESOME! I'm going to try it! :) Right now i'm loving Greek salad - with yogurt, lemon, garlic, chicken, cherry tomatoes and feta- yum!

  5. at the moment my favorite salad is one with YOUR salmon cakes on top....the last time you made them I had to make them and I was just thinking of doing that again!

  6. I was going through a huge salad kick about two months ago, but have stopped as of lately. I think for now my favorite "salad" is just a mixture of cooked veggies with melted cheese!

    I can't wait to see which recipe you choose for your carrot/ginger soup. I would love to make some of my own.

  7. Carrot-Ginger soups sounds wonderful and very fall time.

    As for favorite salad I always go for the same thing. I personally like the "stuff" mroe than the lettuce. I do use some lettuce but I add egg whites, black olives, tomato, feta cheese, mushrooms, and cucumber, chopped. There is a place in Vegas (it's a chain though) called salad works, and I would go all the time to get this salad. I also like to go there since the fro-yo place was next door.

  8. that tomato soup looks so yummy, tomato soup is a favorite of mine. your week meals sound great! can i come eat at your place?! i love how organized you are. the salmon cakes sound fantastic. my fave salad is anything that includes hummus, cottage cheese and hidden valley ranch seasoning on top!

  9. If I could have any salad it would definitely be spinach with grilled salmon and tons of roasted and raw veggies! Your meals sound great; especially the salmon cakes and pizza! :)

  10. I'm kind of a 'boring' salad person, i'll have either spring mix/spinach, with whatever veggies are in the house then some leftover meat or feta/cheddar cheese. Always with my Renee's Greek Dressing... YUM!

  11. I'm not very adventurous with my salads. Typically just dark greens and whatever veggies I have. I do have a taco salad recipe I make with soy ground crumbles. I make my own bowl shells (using flour tortillas) and all my kids just love it.

  12. Mmm, I think I'll have to make pizza sometime this week too :)

    I ate a delicious salad for lunch today, and it had cherry tomatoes, romaine, red peppers, beets, cottage cheese, tofu, hard boiled eggs, tuna salad, and a drizzle of balsamic. This was at a salad bar and delicious!

  13. I am really loving LOADED salads right now with lots of roasted veggies. I'm also obsessed with mixing balsamic and honey for a really simple and delicious dressing.

  14. This is my all time favorite!

    Baby spinach, sliced apple, sliced grapes, feta cheese, croutons, carrots, celery, red onion and Paul Newman's Lite Balsamic Vinaigrette dressing. If its for a main meal, I will add chicken to that

    Any salad loaded with veggies is a good salad in my book - no way around it!
