Potato Pizza with Brie and Caramelized Onions

Last week, I finally made homemade pizza again. This time I made a potato pizza with brie cheese and caramelized onions on a whole wheat crust.

I got the idea for this pizza at my gym of all places. They had an Open House where they served gourmet pizza, and I got a small slice. The slice I got was potato pizza with caramelized onions and truffle oil and a Spanish "brie-like" cheese (that's what the server called it).

I didn't have any truffle oil, but the pizza still turned out well. But I think the truffle oil would have been a nice touch though... I think I'll put truffle oil on my wish list... :o)

Here is the pizza before I put it in a 450 degree preheated oven for about 15 minutes.

And here it is after it came out of the oven.

Okay, so this wasn't the healthiest pizza in the world, but it was good. :o) We ate a simple spinach salad on the side, and I had kept my fat intake low throughout the day so that I wouldn't upset the gallstones...

Plus, the pizza was toddler-approved... :o)

  1. Why I had pizza just the other night! Except the portabella mushroom was my super fast and tasty crust!

    This looks like a pizza I would definitely eat, and I continue to be blown away by the things your toddler eats. Seriously amazing!

    I had pizza Friday night after Nick defended his dissertation - it was one of our favorites with roasted red peppers, pepperoni, basil, and black olives.

  3. ohhh girl, that looks divine! i only wish i liked brie. i don't know why but i think that is one of the only cheeses i do not like.

  4. we actually haven't had a pizza since the Teen made one and it was a bit disastrous!

    but I've had a hankerin' to try the portobello one!

  5. that pizza topping looks sooooooo delicious!!! I'd devour the entire pizza!!!!
    I'm kind of bored on pizza toppings because it serves as a quick meal so I don't elaborate it at all, just veggies and cheese. boring, I know ;(

    I am loving this pizza! Potatoes, caramelized onions and brie are three of my favorite things so this pizza is for me.

  7. I had a pizza like this at an Italian restaurant. The combo truly is amazing. It's one of those things where simple ingredients come together to make way more than the sum of their parts.

  8. OH MY GOSH, that pizza looked to DIE for! Those pictures are incredible! Great post! I'm all about turkey pepperoni and MUSHROOMS! Lots of mushrooms! Garlic, onion, and green bell peppers are favorites, as well. Great post!

  9. Oh how fantastic! That pizza looks so great, and I bet your son has NO IDEA how lucky he is to be eating such a delicious piece of homemade, gourmet pizza.

    The last pizza I had was actually homemade by my Italian friend Michelle. She made her own whole wheat crust and then topped it with the best cheeses and veggies (mushrooms, tomato, and kale!!). It was fantastic.

  11. My last pizza was zucchini, broccoli, black olive and mushroom (was it mushroom, oh boy this is going to be a long day).

    Love your pizza combo. I love brie and I just found some in my moms fridge so I am going to have to have some.

  13. It's been a while since I had myself some pizza. Maybe a month or two. I think it had pesto on it. But as the pizza loving person that I am, I could go for any topping.

  17. this pizza is GORGEOUS! you just had to say brie and I'm in! And I think it is VERY healthy! REally! carbs are good for you, esp for a growing boy like your son :-)

  18. I say it's pretty healthy...whole wheat crust right? ;) I've never had brie on pizza before and it sounds fantastic!

    I make a quick pizza at home a lot with tortillas and toppings included leftover roasted veggies, tomato sauce, mozzarella, and goat cheese. Yum! I really should try out your crust recipe though!

  21. NEVER had potatoes on pizza! but i love the idea.. it is like scalloped potatoes and pizza in one. yum. last time i had pizza? seattle, it was topped with tomatoes and artichokes!

  22. First, I have to tell you that your ingredients post is one of the best I've ever seen!! It's more artistic and has a better background than most :) And that pizza? It looks absolutely delicious!

    The last time I had pizza I had a slice of cheeseburger pizza (beef, pickles, bacon) and a slice of macaroni and cheese pizza. Yep; odd and so not healthy. But yummy!

  23. wow! Like most people I have never had potatoes on a pizza but I'm totally digging the idea of it. I love whole wheat pizza, it's such a great alternative to regular pizza especially for people like us who like to cook healthy.

  26. I honestly can't..oh i remember. It was during all the weddings that happened this summer one was a 5 foot pizza in California. It was a supreme but an amazing one. The other was a frozen one. It was alright but the fresh was better. That looks good. I love how creative the ingredients are. Thanks
