Some Thoughts on Meal Planning & Weekly Meals (9/1 - 9/4)

To be honest, with everything going on in my life, I almost skipped planning meals this week. I just didn't feel up to it... But then I remembered that planning meals actually makes my life easier. I like the feeling of knowing what we will eat (at least approximately; I do switch things around as necessary....). And honestly, when life throws you a few curve balls, it's so important to try to eat well... In planning this week's meals, I took a few short cuts, and you'll see some processed and "non-cook" meals. But I figured that's okay... So here we go:

: Amy's Vegetable Lasagna & Tomato & Cucumber Salad with red onions & feta.

Wednesday: Trader Joe's Organic Vegetarian Chili (out of a can), Trader Joe's Cornbread (out of a box), & a spinach salad (from spinach that I bought at the Farmers' Market). I had bought the chili cans & cornbread mix for an "emergency." I think this week about qualifies...

Thursday: BLTs on sprouted wheat bread with organic bacon, organic spinach from the Farmers' Market & homegrown tomatoes. I'll see what the verdict is on the spinach in the sandwiches...

Friday: It's "Salad Friday." Healthy Cobb Salad with spinach & Romaine, raw blue cheese, organic grilled chicken, eggs, tomatoes, cucumbers, and whatever else I can think of. I'll make a vinaigrette on the side.

I'm looking forward to more "elaborate" meals next week. I'm also looking forward to the change in season and will try to dig out my slow cooker. I used to use my slow cooker a lot many years ago but haven't recently, so I'll be experimenting a bit...

  1. Planning meals ahead is the best thing you can do! No scrounging around to make something for dinner while you munch on everything in the pantry!

  2. I am looking forward to soup, chili, and roast chicken dinners. I love making a coconut curry carrit soup with my farmer's market carrots.
    I love your approach to meal planning this week, mixing some pre made healthy foods with fresh ingredients. It makes things SO much easier and provides a healthy meal for each night!

  3. I love pumpkin flavored treats - lattes, breads, pancakes, etc - in the fall! I love things that only happy during a season - I think it just makes them so much more special :) Your meals sound delicious this week!

  4. Oh the menu sounds perfect, and good for you for thinking ahead even though you did not feel up to it. My mom needs a little lesson in menu planning motivation!

    I am looking forward to apples, pumpkin recipes, cider, spice flavored beers, and soup!

    Fall is my favorite season. This fall I am looking forward to hopefully moving back to CA! :)

  9. I'm looking forward to soups in the fall. I know I can make them in the summer, but it just seems "wrong" to eat soup when it's 100 degrees outside!

    Great job on the meal planning - I do that too.

  10. Meal planning does make life easier. Lunch planning is also helpful for me. This week I haven't done so well on planning everything out.

    I'm looking forward to pumpkin spice lattes! :) My favorite.

    Meal planning is definitely my down fall. I don't plan... we kind of throw whatever together when we get home... which isn't always the best option!

    Your meals look great!!! How is the TJ's cornbread mix? Is it any good?

    I definitely look forward to everything pumpkin in the fall :) I made some chocolate pumpkin banana oatmeal pancakes this morning... lol I'm getting started already! :)

    and baking. I miss that too.

    I like how you realized that planning actually helps.... I have been considering getting back to that too.

  14. I'm looking forward to warm comfort foods including pumpkin and squash. I also love persimmon--one of my favorite fruits :)

  16. I talk about my crock pot all the time, so you've probably seen references to CrockPot365.blogspot.com on my blog before. It's the best place to find interesting recipes for the crock pot.

    I think the easier question is, what foods am I NOT looking forward to! I love Fall and all its bounty. Apples, pumpkins, butternut squash. Yum!

  17. So glad I have visited your blog! My past couple of weeks have been busy with work, teaching and homelife that I did not make my weekly mealplans and it was rough! I had a hard time coming up with things, had tons of veggies around and ended up ordering pizza on Friday and driving through Mc'Ds for myself before teaching. YIKES!! I am making my mealplan today, shopping and praying for a better coming week :) Thanks for the encouragement Andrea!!! By the way do you make your own sprouted wheat bread or do you buy Ezekiel??
