To be honest, with everything going on in my life, I almost skipped planning meals this week. I just didn't feel up to it... But then I remembered that planning meals actually makes my life easier. I like the feeling of knowing what we will eat (at least approximately; I do switch things around as necessary....). And honestly, when life throws you a few curve balls, it's so important to try to eat well... In planning this week's meals, I took a few short cuts, and you'll see some processed and "non-cook" meals. But I figured that's okay... So here we go:
Tuesday: Amy's Vegetable Lasagna & Tomato & Cucumber Salad with red onions & feta.
Wednesday: Trader Joe's Organic Vegetarian Chili (out of a can), Trader Joe's Cornbread (out of a box), & a spinach salad (from spinach that I bought at the Farmers' Market). I had bought the chili cans & cornbread mix for an "emergency." I think this week about qualifies...
Thursday: BLTs on sprouted wheat bread with organic bacon, organic spinach from the Farmers' Market & homegrown tomatoes. I'll see what the verdict is on the spinach in the sandwiches...
Friday: It's "Salad Friday." Healthy Cobb Salad with spinach & Romaine, raw blue cheese, organic grilled chicken, eggs, tomatoes, cucumbers, and whatever else I can think of. I'll make a vinaigrette on the side.
I'm looking forward to more "elaborate" meals next week. I'm also looking forward to the change in season and will try to dig out my slow cooker. I used to use my slow cooker a lot many years ago but haven't recently, so I'll be experimenting a bit...
