Anyway, my Costco didn’t carry the individual containers for the longest time. But now it does. And here is a cute little container that I enjoyed with some veggies (carrots, cucumbers, and mini peppers). The teenager already ate several containers on his own… Yes, I also can’t wait for him to have teenage boys who eat ALL his food within hours of bringing it home from the grocery store…
After not planning meals for a few weeks, I was ready to get back to planning meals this week:
Tuesday: Quesadillas with sautéed onions, mushrooms, and peppers. On the side we’ll have chunky, fresh guacamole.
Wednesday: Salmon in a ginger/lemon grass sauce over quinoa and a salad.
Thursday: Lettuce wraps: marinated tofu, carrots, and cucumbers wrapped in lettuce. We’ll have some almond butter sauce on the side for dipping.
Friday: We are getting our second CSA delivery, and I hope to be inspired. In the last delivery we got a Napa cabbage, and I made a slaw with a buttermilk dressing. If there is another Napa cabbage, that’s what I’ll make. I’m also thinking of some sort of a veggie stir fry and some brown rice.

I have yet to find the Sabra Hummus at my Costco. I am going to look for it again. and I too have leftovers in the hummus, but I think hubs is to blame. haha

ReplyDeletesabra is by far my fav hummus. it's so smooth and wonderful ... just how i like it :) i really like the roasted garlic one or the roasted red pepper. i can't seem to find the new flavors at my stores, but i'm dying to try the chipotle!
ReplyDeleteSeriously, I love the idea of hummus containers, single serve style. I love hummus. My fave hummus is that made by my step dad's mom. They are egyptian, so it is the real deal hummus. She makes it for any occassion we have get togethers. She even served it at my bridal shower. It is the best ever and now I am craving some.

Hummus is awesome of course. Here in Canada President's Choice has started making Topped Hummus and it comes in a variety of flavours. My favourite is topped with chipotle and roasted red pepper. Delish! I like pretty much any veggie dipped in hummus. Or nice crunchy crackers. mmmm. hungry.

I love any variety of Sabra hummus. I usually eat mine with raw veggies or whole wheat pita bread. Your meals look great... you have me craving quesadillas now :)
ReplyDeleteI love making my own hummus. I keep it simple and only using chick-peas, carrots, garlic, salt and pepper and a little water to thin. I eat it with raw veggies. Yummy :)

I've heard the best things about sabra - but never had it! I still can't find the little containers! :( My favorite is Trader Joe's spicy hummus. yuuummmm.

ReplyDeleteNapa cabbage is great for rolling up dumpling fillings, too. That's what my mom does. It's delish. And kimchi, of course! :-)

ReplyDeleteMy favorite hummus is the red pepper hummus. I believe it is by the Atheno brand (is that a brand?). In general, I like any flavor of hummus, it's all good!
Your menu sounds fantastic. Mmm, leetuce wraps. I like that idea a lot. Perhaps I'll do that for my cookbook!
I like the Sarba roasted red pepper hummus the best. I'm gonna have to check to see if my Costco carries the little containers...
