The Week of the Spaghetti Squash

In the past few weeks, I have seen spaghetti squash everywhere, and I kept on thinking that I really “had to buy and make one” as I had never made one before! So last week was the week. Apparently, Annabel from Feed Me I’m Cranky bought the exact same squash (well, not the exact same one of course, but she bought hers at Trader Joe’s as well) on (pretty much) the same day I did and made it the same way I did (according to the instructions on the sticker: microwave for 12 minutes, take out the seeds, take out the “spaghetti” with a fork - this part is a lot of fun!). I served the squash with a simple marinara sauce (out of a jar) along with some chicken in lemon caper sauce. I actually only had the squash and the marinara sauce with a bit of Parmesan cheese, but the guys had the chicken with it.



I think the guys thought it was “okay,” but they tried to be polite. I really liked it, but I totally didn’t expect “spaghetti” but rather a squash dish (and I think that was the key to really liking it).


Later in the week, Alison from Mama’s Weeds also made spaghetti squash with a much more interesting sauce. She made a homemade marinara sauce with sundried tomatoes, artichoke hearts, & pistachios. I can’t wait to try her sauce with the squash!

Tuesday: Salmon in lemon dill sauce, wild rice, & cucumber salad.


Wednesday: Something with kabocha & sweet potatoes. They have to be used up… Any ideas?


Thursday: Carrot Ginger Soup.


Friday: Taco Salad.

  1. I LOVE roasting spaghetti squash I tossing it with loads of sauteed vegetables (leafy greens, mushrooms, broccoli, eggplant), garlic, chunky tomato sauce or pesto, and some basil.

  2. OMG! I eat spaghetti sqaush almost every day! I love it with lots of veggies, sauce or just plain with a little Smart Balance and salt and pepper. I don't think my family would eat it, but I live off of it :)

  3. I really love spaghetti squash and hardly ever have it. In fact, I can't remember the last time I ate it. Thank you for the reminder! Whenever I eat it, I keep it simple too. A little bit of real butter or Becel, s&p and a sprinkle of parmesan cheese at the table. I don't like to mix the parm into the hot squash because I don't want it to disappear.

  5. Who knows if the other comment posted, but I forgot to mention that i make mine with a coconut curry or other thai type sauce and then add broccoli and tofu. That's my fave!

  7. why as a matter of fact I have. The first one I made I just ate...a la plain! (loved it) and Sunday night I made my second and mady a home made marinara sauce with sauteed shrimp, olive tapenade and diced tomatoes and fresh spinach!

    my family/hubs is not a fan either. however I LOVE IT!

  8. I am obsessed with Spaghetti squash, and in fact, this post made me want some right now! I know what my lunch is going to be :) I like it with spaghetti squash and tons of extra veggies on top. It's also good with just some butter and pepper and garlic! For dinner I'll probably make some soup or stir-fry.

  10. I love spaghetti squash. I like to turn it into a salad, mixed with jullienned cucumbers and carrots, and lightly coated with a vinaigrette. The key is to not overcook, and drain the liquid from the squash well before mixing.

  11. I like it although I haven't had it for a while. I like it because I like all kind of squash! ;) I don't eat it expecting spaghetti! :D favorite way? just with marinara sauce and parmesan! :)

  12. I enjoy it just like you made it! But I doubt I could get hubby to eat it like that when there's a perfectly good box of ww noodles in the pantry, lol.

  13. I still need to get me a spaghetti squash. I don't think I've had it yet. Maybe I did, but I just didn't know it.

    My dinner for tonight consists of a little college reunion at our old hang out joint. It'll be nostalgia all over.

  14. I actually just made it for the first time about 6 months ago. My sister kept telling me how much she loved it.

    I actually liked it with a little smart balance spread and a little parmesan cheese.

    I also like doing the marina too of course!

  15. I've been dying to make spaghetti squash after seeing it on so many blogs. Yours looks very good. I'd have to say the same thing to my boyfriend..do not expect it to be exactly like spaghetti! Lol.

  19. Ha, I just bought a spaghetti squash over the weekend and had it last night for dinner :) Basically I had it almost exactly like you - my husband doesn't love it either, but will have it for a meal and then I get excited about having the rest for lunch leftovers :)

  21. I made it with prosciutto and a cheesy sauce and I thought it was excellent but my family said that although it was a fun meal to eat once, not to make it again :)

  23. I like spaghetti squash! I've made it with marinara and meatballs before, or cooked it up in a stirfry type dish. It really doesn't taste like spaghetti to me though, lol :)

    Dinner tonight for me was "fried" brown rice with tofu, edamame, corn, egg, soy sauce, and red bell pepper...yum!

  24. I like spaghetti squash, but if you're really craving spaghtetti, it doesn't satisfy in quite the same way. It's like you said -- if you go into it thinking you're eating squash, you'll love it just fine. I like it with a little browned butter, chopped hazelnuts, and Parmesan on top.

  25. I have never had spaghetti squash... but it's on my list to try within the next week. (I took a challenge from my sister and her friend, we're all going meatless in December! *Eeek* And so I've been looking for new, fun recipes. And eggplant Parmesan and Spaghetti Squash are at the top of my list.)

  27. I grew my own this year and my favorite way to eat it is just as you served it - with a little marinara. I think it would be good with a veggie marinara too, which is what I will probably do with my next one.
    Dinner tonight? ugh - I have noooo idea! Maybe try the new vegan chili recipe I found and serve with green salad and cornbread.

  29. Mmm, capers....

    I bought a spaghetti squash a couple of weeks ago and cooked it. But I wonder if I didn't cook it enough - the squash was a little crunchy. Is it supposed to be?
