Good Bye, Uncle!

Well, my brother-in-law had to go back home, just when the toddler got really used to him… We had a “good bye dinner” on our last evening together. I actually prepared some of the dishes first thing in the morning, so the day was really stress-free and leisurely. Over the years I have learned that less is truly more when it comes to entertaining, and what really counts is having a good time with each other. Here was the “good bye food:”

Purple Rice



Salmon Cakes



Oven-baked Sweet Potato Fries



Brown Rice Spaghetti



Organic Beef Sauce with Carrots, Celery & Onions



Chickpea Stew with Dill



Pickled Radishes



Cucumber Salad with a Yogurt Dill Dressing (recipe to come soon)



And then it was time to say good bye…



When we dropped off my brother-in-law at the airport, we showed the toddler a photo of my brother-in-law’s new puppy and told him that his uncle had to go home to his puppy. He said, “Oh, uncle go home see puppy.” It was now totally clear to the toddler why he had to go. It was so cute…

  1. Aww... Your toddler is so so cute. I love the response he gave when he saw the pic of the puppy.

    Right now I'm baking some red velvet cake balls with White Chocolate coating as part of my holiday giveaway for friends. Then I move onto a Filipino rice cake. Lots to do so little time.

  9. That is adorable. You know what I like best? The first photo you posted, your son was sort of scared, and intimidated by his uncle. In this photo he looks completely comfortable and happy. Kids are so great!

    The food looks outstanding. The salmon cakes would be my favorite, I love them.I'm sort of in a cooking rut lately, I need to snap out of it.

  10. Of course! Must go home and see puppy! So sweet.

    I'm baking lemon square. It's got kind of a shortbread crust and lemon meringue topping sprinkled with icing sugar. It's my one contribution to the Christmas baking. My mom does the rest of it.

  13. Yum, love salmon cakes and sweet potato fries! I haven't been cooking lately...I'm experimenting with a brief raw diet, which I'll explain later on my blog. But I have been creating a lot of smoothies!

  15. Wow, that is quite a feast! The salmon cakes look so yummy! Don't know what I'm making next but I did get some lobster meat, so something nice with that :)

  16. Yum! I will have to make some salmon cakes soon. For dinner today I baked some fish, roasted asparagus, sauteed spinach, sweet potatoes and a salad.
