Weekly Favorite

Lately, our favorite meal has been quinoa salad with roasted vegetables. We love the flavor and texture of quinoa, and it’s easy to change the dish up a bit by making different dressing and using different vegetables.


Last week, I roasted green beans, a yellow pepper, an orange pepper, and a red pepper. Prior to roasting, I tossed the veggies with some salt & pepper and Rosemary Garlic Oil. The oil is one of my recent Farmers’ Market splurges, and it is sooo good. It gave the veggies such a nice flavor, and the kitchen smelled like rosemary while I was cooking them.


I cooked the quinoa for about 15 minutes in vegetable stock, which added some flavor. Once the veggies and the quinoa were done, I simply tossed the salad with a bit of brown rice vinegar and a bit more oil. It was simple, delicious, and flavorful.

Tuesday: Shrimp in lemon/garlic butter over quinoa (Yes, I may be mildly obsessed with quinoa…)


Wednesday: Lentil soup.


Thursday: Chicken fajitas wrapped in lettuce. I think I'll actually have veggie fajitas, but the guys will have some chicken...


Friday: My brother-in-law will be in town, and we’ll go out for dinner.

  4. Rosemary Garlic Oil?? That's going on my list, right now! Those are three of my favorite flavors, seriously, combined into one! Yum.

    I don't make quinoa a lot, mainly because it's expensive and I'm afraid we wouldn't go through it fast enough for it to even be worth the price. Nick doesn't like foods like couscous and he barely eats rice, so I don't know if he'd even like quinoa. I should try though, it's so good for you!

    My favorite meal right now has to be spaghetti squash with steamed veggies, spaghetti sauce, ground turkey and a dollop of Greek yogurt!

  7. I love quinoa so your salad and the shrimp dish sound tantalizing! I have some basil infused olive oil and I love to use it on veggies and potatoes. Gives everything such a great boost of flavour!

  10. Yum... quinoa and roasted veggies look really good. I've never had quinoa. I'll pick some up and give it a try. My new favorite are: acorn squash, butternut squash, spaghetti squash. I'm hoping to try turnips really soon. It's fun trying these new veggies.

    I've been seeing some of those infused oils and I've never really paid much attention to them...may have to give those a try. This is what I love about blogging...there are so many good recipes out there.

  13. i have a box on quinoa just waiting to be used. i wonder why i don't use it? every time i see it on blogs i think about it but alas, it goes unopened. anyway! warm meals are my fave as of late~chili and pastas. mmm.

  14. Lately, I've been eating lentil chili a lot! It is so tasty and made with just a hint of sweetness using pineapple juice. Filling and spicy and healthy and yum!

  15. Right now, anything warm! (expecting a high of 8 today!) Made a big batch of vegan cream of Broccoli soup last night and it's going down really good!

  16. I love quinoa too! Lately I have been eating a ton of beets with balsamic vinegar and goat cheese. Its my go to meal right now.

    My current favorite is chicken fajita's! (Although I only make the meat and veggies. I don't use tortilla's or all the extras.)
