More Juice & Weekly Meals (10/6 - 10/9)

Well, we have used our juicer four times in the last ten days. Not great. But also not bad. We actually love green juice, but as I said before, it's just not realistic for me to juice on days I start teaching at 7:00 a.m.

We have not been very adventurous with our juices either. It's pretty much always apples, lemons, cucumbers (which make tons of juice!), Romaine lettuce, & spinach. I really want to experiment with some carrot/ginger combinations soon...

And here is the green juice - this time in champagne glasses... I know I'm funny, but to me the glass really makes a difference... I drank four glasses of green juice and hubby drank two...

And the toddler always enjoys a little glass as well. Well, to be honest, I'm actually not sure how much he really enjoys it. I think it may be more due to the fact that he currently insists on eating and drinking anything and everything we eat and drink.... But he always finishes about half a small glass, so that's fine with me... :o)

Okay, last week I didn't "formally" plan meals on the blog, but I did write down a meal plan on an index card. And I pretty much stuck to it. We ended up having pasta with tomato sauce and a salad on Tuesday, salmon cakes, sweet potato fries, & green beans on Wednesday, grilled cheese sandwiches and tomato soup on Thursday, and we went out to eat on Friday with my brother-in-law. Taking just a few minutes to plan really made a difference! You can plan meals on anything, and it really doesn't take a lot of time... But it makes life so much easier!

Okay, so here are this week's meals:

Tuesday: Chicken curry with brown rice.

Wednesday: Lentil soup topped with spicy Greek yogurt.

Thursday: Whole wheat pasta with sauteed vegetables, lots of garlic, & Parmesan cheese.

Friday: Spinach Salad with grilled salmon.

Question: What food have you not eaten in a long time and can't wait to eat soon?

  1. So cute that your little boy insists on eating the same food as Mom and Dad. And good for you for encouraging it. Adventurous eaters are adventurous in other ways.

    I make this curried chickpea and vegetable dish with coconut milk as a winter comfort food once every couple of weeks all winter but I haven't had it in months. I think it will be entering the roster again real soon. Yum!

    I don't know what food I haven't had in a long time, generally, if I want something I make it ;)

  3. Vegetable lasagna! It used to be my signature dish and I haven't made it in ages. Guess this is a good week to make it since this week is "meat free" for me!

  6. your green juices look so appetizing in those champaign glasses! :D I need to make some soon too! Try with carrots, my parents' fav is carrot and apples! :)

    I can't think of anything I want to eat that I haven't eaten for a long time.... I usually go to groceries stores and whatever I see that I haven't had for a while I 'll buy it.

  7. Those green drinks in those glasses look like a million bucks. What great barware for the awesome shade of green. I love lentil soup. In fact the place I used to work at in high school served lentil soup. Maybe I could stop there today if I had time.

  9. I'm not much of a juice person. I would prefer soup but that is the most glorious green! I'm looking at winter squash and sweet potatoes...anything orange. I love all the things you can do with it. I've seen loads of muffin recipes lately featuring squash and we've been baking sweets at least once a week.

  11. I love juicing - I should start doing it again.

    I would love a big bowl of homemade chicken pot pie but I won't because it's not good for me. I save it for special occasions.

  12. Oh your menu sounds great. I am really into curry lately so the chicken sounds like a winner to me!
    Something I have not had in a while...Chili! Oh, and lasagna. They are both foods that I save for the fall/winter months, so I'm excited for them both.

    Your son is so cute. Take advantage of him eating what you and your hubby eat! I know you will :) I dare you to eat some brussel sprouts and tofu..haha.

  18. That juice is such a pretty color! Your meals sound great. I can't believe your little one drinks that juice! Mine would look at me and probably hit at it with his hands and then it would go flying! Maybe not though. . .

  24. Your juice looks gorgeous. Must be the age: H. wants anything I have but it's been great because that kids loves hummus, red bell peppers, gouda, you name it!

    A good homemade spicy turkey chili would be my pick. It's getting to be "chili weather"

  26. The color is amazing! I've never had juice quite like that. But I admit to a real fondness for cucumbers in my ice water. It makes me feel like I'm at a spa 24-7. ;)

  29. My youngest is the same as yours... she has to eat everything I eat! She is definitely my best eater! Wish they were all like that! A food I haven't eaten in a while is squash, now that they're in season I'll be buying weekly, yum!! :)
