More Juice & Weekly Meals (10/6 - 10/9)

Well, we have used our juicer four times in the last ten days. Not great. But also not bad. We actually love green juice, but as I said before, it's just not realistic for me to juice on days I start teaching at 7:00 a.m.

We have not been very adventurous with our juices either. It's pretty much always apples, lemons, cucumbers (which make tons of juice!), Romaine lettuce, & spinach. I really want to experiment with some carrot/ginger combinations soon...

And here is the green juice - this time in champagne glasses... I know I'm funny, but to me the glass really makes a difference... I drank four glasses of green juice and hubby drank two...

And the toddler always enjoys a little glass as well. Well, to be honest, I'm actually not sure how much he really enjoys it. I think it may be more due to the fact that he currently insists on eating and drinking anything and everything we eat and drink.... But he always finishes about half a small glass, so that's fine with me... :o)

Okay, last week I didn't "formally" plan meals on the blog, but I did write down a meal plan on an index card. And I pretty much stuck to it. We ended up having pasta with tomato sauce and a salad on Tuesday, salmon cakes, sweet potato fries, & green beans on Wednesday, grilled cheese sandwiches and tomato soup on Thursday, and we went out to eat on Friday with my brother-in-law. Taking just a few minutes to plan really made a difference! You can plan meals on anything, and it really doesn't take a lot of time... But it makes life so much easier!

Okay, so here are this week's meals:

Tuesday: Chicken curry with brown rice.

Wednesday: Lentil soup topped with spicy Greek yogurt.

Thursday: Whole wheat pasta with sauteed vegetables, lots of garlic, & Parmesan cheese.

Friday: Spinach Salad with grilled salmon.

Question: What food have you not eaten in a long time and can't wait to eat soon?
