Happy Saturday!
All three boys started the day with egg/cheese/avocado sandwiches. A very simple breakfast, but they loved it. Hubby decided to take his apart and make it into an open-faced sandwich. He likes to eat things separately… :o) The teenager added lots of ketchup to his sandwich (he is my child after all…).
Lunch was simple too! My mother-in-law had given me lots of veggies, so I decided to make an easy veggie & sausage pasta.
I started by sautéing some onions, garlic, carrots, & celery. Then I added two cut up spicy, organic sausages.
I seasoned the pasta with a bit of salt and pepper. Then I added half a jar of organic pasta sauce and one cup of water and simmered everything for about 20 minutes.
In the meantime, I boiled two kinds of pasta that were left over from previous meals. I tossed the sauce with the cooked pasta and sprinkled it with some Parmesan cheese and some basil. So simple, yet so good…

ReplyDeleteI am afraid to admit what I have eaten today. I am nursing a hangover (from two lousy glasses of sangria last night! how pathetic is that? lol)
Avocado, cheese, and egg sounds like a yummy combo that I have yet to try! The pasta looks delicious too :)

ReplyDeleteNick likes to add ketchup to everything too. I used to be really into ketchup, until I realized that it made me REALLY bloated (maybe the sugar or sodium??? I dunno).
For lunch today I was on a plane and ate a large apple and granola, pathetic. For dinner I had salmon on top of a delicious arugula salad with goat cheese and sweetened pears and walnuts!!! It was delicious.
I'm always intrigued how when different people have the same kind of breakfast, but eat it in a different way.

ReplyDeleteVery cool pasta dish (minus the sausage since I'm a vegetarian). The breakfast looks delish. That's my fave-egg and cheese sandwich. Never tried it with avacado so I may have to try that next time. Today we had pumpkin waffles from TJ mix I brought back with me.
