Easy Teriyaki Salmon with Sauteed Spinach and Green Beans

The other day, I made a really simple and fast yet delicious salmon dish. I marinated some wild salmon in Trader Ming's Soyaki sauce for a few hours and then baked the salmon at 350 degrees for about 20 minutes. It was very flavorful.

My original plan had been to make an Asian-inspired spinach salad to go with the salmon, but somehow I was in the mood for sauteed spinach. I had over a pound of spinach, which is a lot when it's raw. However, once you cook it there isn't much left... So I sauteed some frozen baby green beans with the spinach. I seasoned the spinach and the green beans with salt, pepper, basil, garlic, & cilantro.

  1. Oh this looks DELICIOUS! Yes, I love spinach and typically have it at least 3-4 times a week, usually raw in a salad but sometimes cooked in scrambled eggs!

    in a smoothie HA or I guess steamed...Steamed over salmon is always PERFECT!

  4. Oh wow, that looks so tasty! I really enjoy spinach, and I would say my favorite way to eat it is sauteed in some EVOO and balsamic, with a bit of garlic. I also really like it with salmon, it's the perfect combination.

  5. I use to hate spinach, but I love it now. I'm most likely to eat it raw in a salad, but also like it sauteed with garlic and soy sauce...

  6. Teriyaki salmon sounds excellent with sauteed spinach & green beans! My favorite way to prepare spinach is to also saute it quickly with a little garlic or red pepper flakes.

  8. That looks really delicious. I love eating spinach on paninis. It has to be chopped up finely though. I also made brownies with spinach once. Turned out pretty delicious actually. :)

  10. Looks yummy. I can only handle so much spinach. When I was in high school I had the brilliant idea to microwave some spinach for dinner. I put a whole can in a dish and nuked it for like 3 minutes. Lets just say when I opened the door and got a whiff, I have had issues ever since. Oops!

  14. Love my spinach fresh as a simple salad of laid under other steamed or hot food like pasta and Italian chicken, or under a bead of steamed red potatoes and balsamic salmon. That's a good recipe.

    I love it in all ways, in everything: raw, cooked, baked, as stuffing, in pasta, with sauce, AS sauce, etc...
    Oh have you ever tried the Korean beancurd spinach soup?

  17. I love spinach even when I was a kid. Must be the Popeye influence. I like to eat spinach raw or lightly steamed with a tad of oyster sauce.

  18. My favorite way is the easiest way -- sauteed with olive oil, garlic, and sea salt, and sometimes a little pinch of red pepper flakes. It's the easiest side dish ever.

  19. Oh baby... me + spinach = love affair of the century!!!
    # 1 way I love spinach = Raw out of the tub/bag (with my hand, like I'm grabbing for chips) and squirts of ketchup on it! :) I go through one pound in... uh... a day and a half!!
    # 2 way I love spinach = as a bed for ALL of my meals... I love raw spinach with warm food, because it wilts!
