Here are this week's meals:
Tuesday: Sophia's Pasta in Creamy Sun-Dried Tomato Sauce with Red Peppers and Artichokes. When I made this pasta the first time, the toddler (as well as the rest of us) absolutely LOVED it. The toddler has been a bit of a picky eater lately, so I'm hoping this dish will get him over his "pickyness."
Wednesday: Grilled salmon, brown rice, & a cucumber salad with Greek yogurt dressing.
Thursday: Open-faced veggie burgers on whole grain bread with avocados, tomatoes, spinach, onions & cheese. I hope to make my own veggie burgers. But if I don't have time (that is if I'm having too much fun playing with the toddler and perhaps the teenager and hubby), I'll just use the ones I have in the freezer!
Friday: It's Salad Friday. The cabbage at the Farmers' Market looked great, so I'll be experimenting with a White & Red Cabbage Slaw with fennel, green onions, almonds, & raisins. The dressing will include Greek yogurt, sour cream, and lemon juice.
