Weekly Meals (July 7 - July 10)

Here are this week's meals:

Tuesday: Sophia's Pasta in Creamy Sun-Dried Tomato Sauce with Red Peppers and Artichokes. When I made this pasta the first time, the toddler (as well as the rest of us) absolutely LOVED it. The toddler has been a bit of a picky eater lately, so I'm hoping this dish will get him over his "pickyness."

Wednesday: Grilled salmon, brown rice, & a cucumber salad with Greek yogurt dressing.

Thursday: Open-faced veggie burgers on whole grain bread with avocados, tomatoes, spinach, onions & cheese. I hope to make my own veggie burgers. But if I don't have time (that is if I'm having too much fun playing with the toddler and perhaps the teenager and hubby), I'll just use the ones I have in the freezer!

Friday: It's Salad Friday. The cabbage at the Farmers' Market looked great, so I'll be experimenting with a White & Red Cabbage Slaw with fennel, green onions, almonds, & raisins. The dressing will include Greek yogurt, sour cream, and lemon juice.

  2. I know, I feel like I should make some veggie burgers too but the frozen ones are pretty darn good and just so quick!!!

    Tonight I’m going out for my birthday! Wednesday night is Supreme Calzones, Thursday night is Basil Chicken with Quinoa and Friday night is Greek Feta Chicken! I heart a meal plan!

  6. Oh wow, your meals are interesting, mine are boring. I have some eggs in the fridge that need eaten, along with some turkey burgers and avocado! We are going on vacation next week so I plan on using up everything that is perishable!

  7. Great dinner plans. I usually don't plan my meals that far in advance. I just try to use up whatever is in the fridge. Right now, I have a big bag of Costco size spinach that I am trying to use up. Dinner will probably be a big spinach salad or a overstuffed wrap.

    I'm switching up my menu now that I decided to go vegan :) I'm excited to incorporate healthy, new foods into my diet :)

  10. Oh dear, I hope the toddler gets past the picky stage...but don't worry, I was a pretty picky eater too but look at me now! hahaha!
    I'm eating out (dunno where) tomorrow but I've got something with feta planned for this week's BSI!

  11. That sounds like a good week of food. :) I plan on... being spontaneous and eating whatever happens to pop in my head around dinner time. My mom has learned to live with this because I do all the cooking!
