Happy Friday!

Happy Friday!

Today we are having our annual 3rd of July family portrait taken. It should be interesting as the teenager refuses to cut his hair or shave off his sporadic facial hair and the toddler has had the most unpredictable sleep schedule. So there is no way of knowing how he'll feel/behave/cooperate at the time of our appointment... Oh well, it doesn't have to be a perfect picture; it's okay if it depicts our real life.... :o)

In addition to the portrait appointment, we have numerous errands to run, a work meeting, and we have to take care of my in-laws' lawn and garden. We also have to make it to the gym so that the toddler can play with his friends.

While cleaning out the fridge a bit last night, I noticed a big paper bag of mushrooms that I bought at the Farmers' Market a while ago. They really needed to be eaten. So I decided to incorporate them in today's breakfast:

Sauteed yellow & red potatoes, scrambled eggs with mushrooms, tomatoes & lots of basil

We actually couldn't finish all the potatoes. I only sauteed three small potatoes, but I cut them very thinly, so we each didn't eat that much. Plus, I think we have been eating fewer carbs lately, so maybe our appetite for carbs has changed?

I am looking forward to a weekend of relaxing, hiking, water, sun, & BBQs. Being active is so much easier and so much more fun when the weather is nice! I know, we are spoiled as the weather in the summer is always great around here...

    I have plans to do some eating and a bit of tequila drinking (margaritas made by my dad!). I'm excited to not think about my thesis for a couple days.

  5. oh, that sounds like a great weekend ahead of you...and don't worry about the pics! lol! Each year you're gonna take another pic, right? so each year should be interesting! Just think of your teenage boy looking at that photo when he's all grown up! haha!
