Veggies, Cheese, and Bread

Yesterday, we got our CSA box, and I’m looking forward to a “green weekend!”


Here is what we got:
  • Spinach
  • Kale
  • Collard greens
  • Leaf lettuce
  • Green onions
  • Apples
  • Oranges
  • Potatoes
  • Asparagus
We also received a loaf of Nature’s Pride Hearty Wheat with Flax bread via the Foodbuzz Tastemaker program. Thank you Foodbuzz and Nature’s Pride.


I plan on using the bread in some grilled cheese sandwiches, and I’m thinking about “interesting” fillings, like olives, tomatoes, mushrooms, apples, walnuts, almonds, strawberries… We’ll see how creative I can get!

I guess I have been in a “cheesy” mood lately because I made a cheesy pasta bake yesterday. I boiled some pasta and in the meantime made a simple sauce by browning two slices of bacon and draining the extra fat. Then I added some mushrooms and three wedges of laughing cow cheese to make a sauce. I also added some pasta water to make the sauce a bit thinner. I mixed the sauce with the pasta, transferred it to a casserole dish, sprinkled it with cheese, and baked it for about 15 minutes in a 350 degree oven, until the cheese was melted. We ate the pasta with a salad. Easy comfort food! Smile



It rained all day yesterday, and there is lots more rain coming our way. Luckily, we took advantage of the dry weather on Thursday and headed to the park. I love daylight savings time!




Questions: What do you add to grilled cheese sandwiches? I’m looking for ideas. Any exciting weekend plans?

  2. Asparagus! Love it roasted or steamed with a little lemon squirted over it. My mother used to put a cream sauce over fresh asparagus and it was superb...but, of course, we don't do the cream sauces much anymore.
    My husband enjoys a slice of tomato and a little Miracle Whip with his grilled cheese...really great in the summer with the good tomatoes.
    I've also seen lots of people adding leafy greens like spinach.

  3. Love the CSA box! I'll have to look into one around my town once it gets warmer:)

    I always had sliced ham, tomato and sometimes bacon to my grilled cheese.

  5. Yep, I love daylight savings time too (after the first couple days....) because Nick and I can walk AFTER dinner! It's great.

    Your comfort food dish sounds marvelous. Nothing beats the combination of cheese and mushrooms. Not everyone would agree with that, but that umami taste with the cheese is just amazing in my opinion!

  7. oh gosh what beats baked and cheesy pasta!

    I have a panini grill so we make them a lot and stud them with everything

    it's icky here too and we are resting after being sick (me too)

  8. Ooooh, grilled cheese sounds awesome right now!! I usually make mine with muenster cheese and then I have a little apple butter on the side for dipping, I've even got my husband dipping his grilled cheese in apple butter, it's so good!

    I'm so envious of the CSA goodies!

  10. I don't know about up there but down here the rain has been CRAZY. It's been pouring all weekend!

    What a loot you got! Yay!

    I always make my grilled cheeses plain. In college, I worked at Mel's Diner and would order them with black olives and tomatoes. I loved them!
