Butternut Squash Triangoli and a Salad = A Delicious Weekend Lunch

A few weeks ago, I picked up some butternut squash triangoli from Trader Joe’s for the first time. Hubby, the toddler, and I have been in love with them ever since. They are sweeter than “usual” pasta and taste great simply boiled.


To put together a quick weekend lunch, I boiled the pasta and then coated the boiled triangoli with a little olive oil and Parmesan cheese. I served the pasta with a tomato cucumber salad. I think next time, I will serve the pasta with a green salad with a nice, acidic dressing and some candied walnuts and maybe some dried cranberries.


We also spent some time at the park. The weather is beautiful today, but it’s supposed to rain again tomorrow and next week, so we wanted to take full advantage of the park.


Questions: Do you have any recent food finds? What is your favorite type of pasta? As a kid, I was obsessed with ravioli - the kind in a can (which my mom refused to buy for me…). These days, I love spaghetti, but I also enjoy a nice filled pasta, like ravioli, once in a while. What have you been up to so far this weekend?

  4. Fresh and Easy sells a really good butternut squash ravioli that is fresh like that. I am positive Trader Joe's is AMAZING!

    we are outside this weekend too, just in case we are house bound in the rain too~

  5. I was just at Trader Joes a couple days ago how did I miss that pasta? I like penne pasta the best.

    How nice you got out and enjoyed the sunshine. It's raining again today. I have had a do nothing kind of weekend. I still feel terrible so I have spent a lot of time on the couch. This so has to end soon!

  6. Who wouldn't love ravioli?! Pasta (which is always awesome) filled with creamy cheesiness or yummy pureed winter squash. I'm down with that!

    I wish I made it out to TJs more often. There are so many great finds!

  7. I didn't know TJ's had butternut squash ravioli. That is honestly my favorite! I will have to pick it up.
    It's not really a food fine but my personal blender is too fun. I want to blend everything!

  8. Yum! I've never been a huge pasta person, but I like ravioli and tortellinis. Especially when filled with pumpkin or b-nut squash!

    Raw dairy is the shiiiz! Raw cream, butter, and cheese especially. I don't drink much milk either...just plain it upsets my stomach and I don't really eat cereal. This raw milk actually didn't upset my stomach though. I think it has something to do with the A1/A2 casein difference. But I still don't drink much milk either way, so I'll stick with the other three.

  10. This meal sounds absolutely perfect. I don't typically buy Trader Joe's prepared foods, not that I am against them I just never think to do it. I know so many foods have garlic and/or onion added, so maybe I just have an aversion to them.
    No new finds for me, other than my walnut butter, with which I'm still obsessed. Today is my day off an I'm planning two meals for dinner "parties" this week: Scallops with Olive Oil and Tomato Compote, and a steak fajita dinner!

  11. Those sound amazing! It looks like an Italian product of Trader Joe's??? I didn't even know they did such a thing! I am definitely keeping my eye out for those!

  13. I actually like most pasta's. The triangoli can't be bought here. It looks good though.

    Nice photos of the park. We finally had a beautiful sunny day yesterday too and we took advantage of it by going to the forest for a walk with Bella.

  17. oh gosh, when i was a kid i probably loved all kinds of pasta, especially KD and spaghettios (not that we had them a lot.) now, i probably prefer wholegrain boring adult stuff. your butternut squash in ravioli sounds delish!

  18. The ravioli sound so tasty! My fave pasta has to be spagettini (the really thin spaghetti). I'm not fond of the broader noodles. Glad you were able to enjoy the park before the rain it again! It's always a good thing when little ones get enough fresh air...
