The other day I needed to use up some kale that was getting a bit too old in the fridge, and I was in the mood for something different. I decided to add lots of carrots, two small apples, and a good amount of ginger. For some reason, I had never made carrot juice… Not sure why….

The juice was delicious, but it was certainly not the prettiest juice I’ve ever made…

Questions: What’s your favorite way to eat/drink carrots? I love peas and carrots in sesame sauce. But I think carrot juice is a close second! Can’t wait to make it “pretty” by not adding any greens next time…
