Ugly But Yummy Juice

I’ve been juicing regularly over the past few weeks, and I love it. Our CSA box always contains several bunches of greens, and anything I don’t use in salads or stir fries, I juice. My “usual combo” is some greens (spinach, Romaine lettuce, kale, collard greens, Swiss chard, etc.), one cucumber, one lemon, other citrus (oranges, pomelos…) and two small apples. The green juice is beautiful.

The other day I needed to use up some kale that was getting a bit too old in the fridge, and I was in the mood for something different. I decided to add lots of carrots, two small apples, and a good amount of ginger. For some reason, I had never made carrot juice… Not sure why….


The juice was delicious, but it was certainly not the prettiest juice I’ve ever made…


Questions: What’s your favorite way to eat/drink carrots? I love peas and carrots in sesame sauce. But  I think carrot juice is a close second! Can’t wait to make it “pretty” by not adding any greens next time… Smile Do you like carrot juice? I can’t wait to make some “pure” carrot juice with apples and ginger.

    or carrot apple ginger juice.

    THAT is my ultimate favorite!

  4. I love carrots with hummus! Carrot juice is a bit too strong for me. I have to take super tiny sips to get it down! Have a good weekend ANdrea! ((hugs))

  5. I am loving this drink... I think I need to dig my juicer out of my cupboard. I love carrots any way except overcooked and soggy.

  6. hahaha, carrots are the one vegetable I HATE!!! I will not eat them in any format if I can avoid it.

    I will eat roasted carrots but... meh.. I try to eat other sources of vitamin A/Carotenoids since there are so many!

  7. I don't have a juicer but I love to make green smoothies in my Blendtec with kale or baby greens, carrots,a little chunk of beet, carrots and some frozen berries! I feel so healthy after drinking it.

  8. What kind of juicer do you have? I have an older one and it seems to take so many veggies and fruits to make just one cup that it doesn't even seem worth it. Do you like yours?

  9. My processor isn't the "most powerful" so doesn't chop up carrots too well. I'm pretty obsessed with carrots, so it's unfortunate! Looks yummy! My favorite? anything with a banana (combined w/almond milk) and apple! Love it!

  10. I actually just had pure carrot juice for the first time the other day. Market District has a juicer and they made carrot juice (just carrots) for me and some others to try a couple days ago. I'll be honest, I didn't like it!! I would have much preferred it with apples and ginger added. Yum!

  12. Fresh juice is sooo good! For me, roasted carrots are the best. BUT...I made carrot lentil soup last week, and it was excellent, so that may be a new fave. Hope you have a great weekend Andrea!!!

  13. Some of my favorite juices have been really ugly colors! I tend to throw every veggie I can get my hands on in the mix.

    I think just munching raw carrots is my favorite way to eat them!

  15. ugh. i want a juice so bad. but then i have a feeling my grocery bill will skyrocket, and i am not sure i could afford that :)

  17. I don't have a juicer, but I have a magic bullet that does a great job with juices. I usually make morning smoothies, but I'll give your green juice suggestions a try. What a great way to get those greens in!
