Mommy Make Juice, Please!

The toddler has been obsessed with making juice lately. He gets so excited when we make juice, and his favorite juice seems to be apple/carrot juice these days, at least that's what he keeps asking for. But he actually doesn't mind all sorts of veggies (spinach, kale, Swiss chard, Romaine, cucumbers...) in his juice and is truly fascinated by the veggies and fruits going in the juicer and juice coming out...

The other day I had not planned on making juice as I was out of greens, but since the toddler asked for juice, I made apple/carrot/lemon juice. I am happy to report that because of the toddler's obsession with juice, the juicer gets used quite frequently in our house!

And I still love drinking my juice in a pretty glass...

Questions: Are you getting enough fruits and veggies these days? What's your favorite way of eating them? Besides vegetable/fruit juice, I love big, "interesting" salads...

And, there is no denying that the holiday season has started. Here is a picture of the toddler a few weeks ago when the Christmas tree in front of our gym went up.

  1. I usually snack on fruits throughout the day while consuming more veggies at meals times. I usually prefer cooked vegetables over raw.

  3. That is one HUGE tree!

    I think it's so awesome that the toddler likes his veg. My daughter does, too, but not my son. At least he will try a taste before declaring it "EWWW", though...

    I love pure veggie soups. I like to throw leftover veggies into the magic bullet with a laughing cow cheese wedge. Yum!

  4. I try to fit veggies in whenever I can. Usually veggies end up at dinner and fruits with breakfast and lunch. Glad your juicer gets a lot of use!

  5. oh, lately I am roasting and baking my veg's. I just did more Kale and Brussell sprouts that way and it was DELISH

  6. Some days are definitely better than others in terms of fruits & veggies. I should really start making more smoothies with greens & veggies in them! I've actually only ever had fruit smoothies before :)I love how happy your little boy looks in front of the Xmas tree!

  7. I have to work at getting in sufficient fruit and veggies in a day. I've been tracking my intake for the month of November and I knew I was somewhat lacking but it has really driven home the fact to me that I can go days without a decent serving of either! Definitely need to pump this up!

  8. Such a great thing to hear that a toddler is begging for juice (and not the crappy kind, the fresh homemade kind!). My mom used to only serve me Juicy Juice as a kid, no other kind of juice. Have you tried it? It's tasty!

    I am definitely eating plenty of F and Vs. I ALWAYS make sure to get at least 6 per day! I keep track too :) Yeah, I know, weird!

  11. apple and carrot juice is my parents' favorite too!
    I stopped juicing because I get too cold with green juice, so for now I get veggies mainly through meals and one piece of fruit a day! :)

  13. Andrea, you are such a good mother! You've accomplished something that most parents struggle with - getting their child to seek and love fruits and vegetables. My goal is to gather as much variety as possible, so that over a span of a month, we're not eating too many repeats of the same vegetables from day to day. It gets much easier as I accumulate all these great recipes from fellow bloggers.

    Also, thanks for letting us know about the fund raising campaign for the well in Cambodia.

  16. I eat a huge baggie of fruits that I take to school. I especially love honey crisp apples and persimmons at this time of the year. For dinner, I ate a ton of veggies because my mom made ddukboki (spicy korean rice cake dish) with a lot of cabbage, onions, and broccoli. Yum!

  17. That is the cutest picture! :) I made an awesome salad tonight, spinach, pasta and bruchetta salad tonight. Such a delicious way to get in some fruits and veggies.
