Leftover Makeover: Grilled Salmon Morphed into Salmon Salad Sandwiches

I don’t mind leftovers. In fact, I usually love them. Unfortunately, not everyone in my family shares this enthusiasm for leftovers…

I made grilled salmon on a bed of baby greens for dinner and (for once) didn’t feel like eating the exact same meal again. I therefore took the leftover salmon and turned it into salmon salad.


Salmon Salad Sandwiches (enough for 2 sandwiches)

Ingredients
  • 1 Grilled (leftover) wild salmon fillet
  • Juice of 1/2 Meyer lemon
  • 1 tablespoon Wasabi Mayonnaise
  • 1 tablespoon capers
  • Baby greens
  • 4 Slices of toasted bread (I used Alvarado St. California Style Complete Protein Bread)

 A tasty lunch!



Question: What are you having/did you have for lunch today? Do you like leftovers?  Do you  usually “morph” leftovers into something else or eat them “as is?”

  3. I'm a left over queen too! In fact, I usually plan for left overs. Sometimes I morph them and sometimes not. This was a great morph! Not sure what I'll be having for lunch today. I think I'm out of leftovers!!! :-(

  4. I love leftovers! Especially since most of the time the meals are just for me, it works out pretty well.
    I am boring and don't change it up..need to work on that.

  6. I love leftovers too! Your salmon salad looks delicious.

    Today I plan on eating leftover pulled BBQ chicken that I made over the weekend in the slow cooker. Sometimes I "morph" leftovers into something different. The other day, I used leftover rotisserie chicken to make chicken quesadillas.

  8. ooohhh andrea! this looks DELIGHTFUL. i've recently been really getting into wasabi. i never used to like it, but i bought wasabi peas and it's slowly growing on me. hope you have a fantastic wednesday!!!

  9. I LOVE leftovers! Today for lunch I used leftover spaghetti sauce, and leftover new potatoes, and mixed that together in a pan with a little cheese. I know it sounds weird, but it tasted great!

  11. This meal is right up my alley! I love your innovative thinking here. I wouldn't think to take a salmon filet and make it into salmon salad, but it seems like such a simple idea! Thanks for sharing. I actually made a similar salad with tuna and wasabi mustard, with greek yogurt. It was awesome.

  16. I love salmon and this looks like an awesome sandwich. We are having omelets tonight. I usually just eat leftovers as is, but probably because I can't another use for something like mach and cheese or pasta or something like that.

  17. Your salmon sandwich looks delicious. I love leftovers and like to turn them into some other dishes sometimes. I just had chicken soup for lunch I made with the remainder (wing tips and carcass) of the chicken from the braised chicken I recently made.

  18. Jason and I love leftovers for lunch the next day. We usually just eat them as is, but if there's not much left I'll add other ingredients to bulk it up....
