Veggies, Rain, and a Museum

Yesterday we got our CSA box.

Here is what we got and what I plan to do with it:
  • Apples – lunches
  • Oranges – lunches
  • A lemon – green juice or a salad dressing
  • Potatoes – I roasted them for dinner tonight
  • An onion – I used it in the salmon cakes I made for dinner
  • Green leaf lettuce – dinner salad
  • Broccoli – I roasted it for dinner tonight
  • Fennel root – Not sure yet. Any suggestions?
  • Collard greens – Maybe I’ll juice them again…
  • Swiss Chard – Probably a stir fry
It’s been raining a lot the past few days, and it’s a lot colder than it was just last week. To entertain ourselves, and especially the toddler! Smile, we headed to a children’s museum.

And we had lots of fun.

Yesterday’s dinner was quick and simple: A potato/bean/tomato salad, precooked lentils, and Greek yogurt (yes, the lentils do not look very appetizing, but they tasted good):

I put the potatoes and green/white beans in a microwave-safe glass bowl and covered them with a moist paper towel. Then I microwaved them for about 10 minutes. In the meantime, I made a dressing:

Potato/bean/tomato salad dressing
  • 1 tablespoon olive oil
  • 2 tablespoons Orange Muscat Champagne Vinegar
  • 1 teaspoon gochujang (Korean red pepper paste)
  • 2 teaspoons Aioli Garlic Mustard Sauce (from TJ’s)
  • Salt
  • Pepper
After the veggies were cooked, I poured the dressing over the warm veggies and let them marinate a bit. After they cooled down, I added the grape tomatoes.

Today I started the day with some yoga, which was very nice. We also went to a “beer and food truck event.” I was the designated driver, but hubby had a great time! Smile Here he is enjoying a “Korean taco” and a Hefeweizen. And the toddler is focused on the free nachos he got after saying “hello” in Korean to the person in the Korean taco truck… Smile

  2. The best thing I have had to eat this weekend is the artichoke spinach dip I made last night! I will be blogging about it next week.

    The orange muscat vinegar is my favorite for salad dressings! That stuff is so amazing, I just don't get tired of the flavor.

    I went shopping today for kitchen things for a single mom who lost all of her stuff to a fire. It was really fun picking things out for someone elses kitchen. I had to think about what things do I really need and use in my kitchen and what could I get along without.

  3. This museum looks like COSI (our science museum here in COlumbus). In fact, the children's area looks the exact same! I used to love that place.

    Whenever I see your hubby with a hefeweizen I want one :) My weekend hasn't started yet, but I'm off tomorrow and tonight I plan on hanging pictures, drinking a beer I just discovered we sell at Market District (blueberry ale from Bar Harbor Maine) and catching up on some tv shows!

    Wow, that looks like a fantastic weekend!! That dinner looks like something I would LOVE! I really love lentils, no matter how unappetizing they look! :)

    This has been the first weekend in forever that I haven't had a bunch of work to do, I've actually been able to relax and enjoy it for once! :)

    The best thing I've eaten so far was definitely friday night's cheeseburger! :)

    Now if only I could find a place around here that made Korean tacos, that sounds amazing!!

    I loved going to childrens museums when hannah was little. The water table was always her favorite. I am so sick of hospital food, so I made a pot of cauliflower cheddar cheese soup with bacon for my dinner last night - I found a microwave to use at the hospital! Hope you are enjoying the rest of your weekend!

  8. oh gosh, when i was a kid i would've had such a blast there! my weekend....well i'm not sure if i ate anything special, but we did go to Sydney's largest wine event! ('nuff said. :))

  11. My Mom always roasted fennel root which is pretty tasty. Sounds like the toddler enjoyed the museum!!
