I had a giant bag of mixed organic berries from Costco in the freezer. I decided to use lots of berries and lots of yogurt, so the end result was less a soft serve but more a cold smoothie in a bowl. Hubby and the toddler loved it!

Berry Banana Smoothie in a Bowl
Ingredients
- 1/2 cup frozen berries
- 1 frozen banana
- 1/2 cup non-fat vanilla Greek yogurt
- Put the frozen berries in a food processor and puree.
- Add the frozen banana and the yogurt and work until smooth.
- Enjoy!
Prep Time: 2 minutes

I loved the color of this smoothie! The mixed berries and the yogurt gave it the most amazing shade of pink! And I love pink!
Instead of a question, I ask you to hug someone you love right now. As I was writing this post, I got a phone call from my sister. My sister is not one to call out of the blue, so I got a knot in my stomach right away. My dad was admitted to the hospital today. They found a tumor behind his eye yesterday, and the doctors believe it has likely spread. He’ll have to have surgery and start radiation next week. We don’t know much at this point, and he’ll undergo more testing in the next few days. Being on another continent makes this even harder… I love living here, but in times like these, I really hate being so far away from home… Not sure how much I’ll get around to your blogs or how often I’ll update my blog…

ReplyDeleteOh no, I am so sorry about your dad. I know how rough that is. I can't share too much here, but I can tell you my sister lost an eye to cancer (when she was 2 years old) and there are some on going medical things with that. Actually that is a reason why I am at home now visiting her. She is fine but it can be rough. I relaly hope the cancer is treatable at this time.

ReplyDeleteThis recipe sounds amazing. Note to self, do not put whole bananas in the freezer. Last time I read your post about the soft serve, I was sick. I got right out of bed and lazily put 3 bananas in the freezer, WHOLE. I even knew that was dumb, but I wasn't thinking. Needless to say, they were ruined.
I'm so sorry to hear this Andrea. As someone who has lost her Dad to cancer I know how you must feel. I live at a 30 minute drive away from my Mom but at that time even 30 minutes was too far away. Take care and I'll say a prayer for your Dad.
