We decided to make a healthy, colorful, and tasty brown rice pasta salad with lots of veggies, including broccoli coleslaw mix, red and yellow peppers, mushrooms, peas, celery, and cucumber. We coated the pasta and the veggies with the juice of one lemon and then lightly dressed the salad with the Newman’s Own Lighten Up Caesar Dressing.
And thanks everyone for your continued support and your thoughts and prayers for my dad. We truly appreciate your support!

i do love pasta salad. in high school i used all those boxed mixes to make them.

I don't eat pasta often, because I'm just not a big fan (I know, I'm an awful Italian!!!). I would rather eat a thick slice of hearty bread. However, I do like a good pasta salad every once in a while, especially when it's brown rice pasta!! Yum.
Great video! I love all of the colors in this salad and heart t hat he had a little role with the plastic knife + mushrooms! He just wanted to eat plain pasta! hahaha
