A Birthday Pumpkin Spice Smoothie

A few weeks ago Foodbuzz invited Featured Publishers to submit smoothie recipes made with LACTAID milk. LACTAID Milk is real cow’s milk, but without the lactose. I have several friends who are lactose intolerant, and I have always been curious about lactose-free milk and was excited about the possibility to try LACTAID Milk. When I read the call for recipes, I had pumpkin on my mind. I immediately thought about the pumpkin pie syrup in the fridge, the can of organic pureed pumpkin, and the jar of pumpkin pie spice in the cupboard – the idea of a pumpkin spice smoothie practically appeared out of nowhere and I quickly submitted my proposal.

I was very excited when I was notified late last week that my recipe had been chosen to compete for a chance to attend the Foodbuzz Blogger Festival in November in San Francisco. I also received a coupon for a free half gallon of LACTAID Milk. I chose fat free LACTAID Milk. I poured myself a little glass before getting started on the smoothie and really enjoyed the taste of the milk.

But now on to the smoothie. As I mentioned, the “recipe” practically “flew” into my head, and I was a bit nervous when I actually made the smoothie. Before starting, I said the following words to hubby: “What if it tastes like feet?” He laughed and said nothing I have ever made tasted like feet… And, luckily, the smoothie did not taste like feet but turned out truly delicious. I can honestly say that I’m quite proud of myself as I hardly ever make smoothies…

Pumpkin Spice Smoothie
  • One cup fat-free LACTAID Milk
  • One frozen banana (cut into small pieces before freezing)
  • 1/4 cup organic pumpkin puree
  • 1 tablespoon pumpkin pie syrup (if you like a stronger, sweeter flavor, add a bit more)
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon pumpkin pie spice

Put all ingredients in a blender and blend until smooth.

I poured the smoothie in pretty glasses, just in case it didn’t taste good… But, as I said before, it is really good.

Now, you may be wondering why this post is called “A Birthday Pumpkin Spice Smoothie.” Well, I was instructed to post the recipe today (not earlier and not later), and today happens to be the toddler’s birthday. I couldn’t help but think that must be good luck as it’s one of my favorite days of the year… Winking smile

And, yes, the toddler liked the smoothie, too! Smile

  4. That face! Combine that with the recipe and the ad could launch a campaign they would never believe! lol
    I've never tried it and am not a big fan of milk in general. I grew up on a farm and the smell of warm milk straight from the cow still lingers in my memory. I prefer other dairy products but will sometimes make drinks with a cup of skim milk, crushed ice, vanilla, Splenda, and instant coffee granules in a blender. I do love the combination of banana and pumpkin. Ina Garten does a Holiday dessert that combines the two.

  5. I have tried Lactaid milk and really liked it. Actually, I didn't notice a difference in taste at all!

  7. I LOVE lactaid!! You know, for some reason I haven't thought to buy it now that I know I am lactose intolerant. I guess I'm still stuck on soy and almond milk. But I really need to start buying it again because I miss the taste of "milk". Lactaid has that added sweetness, which I love. And I'm sure it was awesome in that smoothie!!! And yes, pumpkin is amazing, I am obsessed with that too :)

    I actually always buy lactaid milk bc the husband is lactose intolerant.

  11. oh the smoothie looks lovely! i actually don't buy lactaid, i use almond milk in my home. :) it's lactose free and really low cal. i love it.

  13. Not only does milk aggrivate my IBS, but I hate it! YIKES! Buuuttt, I knew I needed the calcium when I was pregnant so I bought the Lactaid and made chocolate milk for myself every morning. If I had to do it over (which I'm glad I don't, BTW), I'd be using it in smoothies! LOL

    and YES. last year during pumpkin-falooza I abstained. I like pumpkin but could not see myself adding blobs of puree into my oats or anything. So this year I got over my fears and opened a can of Libby's. Move over pumpkin pie. It's delish!

    so far I've made the pumpkin oats (pumpkin chocolate, pumpkin almond butter) and I added it to some pasta, and last night to some pancakes.

    I'm in love!
    now I must try that smoothie.

  16. This looks delicious! I am going to have to make this soon! I love the pumpkin smoothie at Jamba Juice but it is definitely a treat and not super healthy.

    I've never tried Lactaid milk, but my dad used to drink it all the time and he seemed to like it :) Maybe I'll give it a try one of these days!

    I've never actually tried LActaid before...I'm not much of a milk fan, since most milk I've tried here in America tastes kind of...watered down? I dunno.

  23. I've never tried Lactaid. I don't drink much milk. However I think we are going to join a raw milk co-op so I'm sure I will be drinking more.

  24. Interesting smoothie. I have never made anything with pumpkin although I did eat it at friends or in restaurants.

    I love smoothies with fruits, don't like the green smoothies.

    I'm using soy milk lately which is lactose free too. Don't use it because it's lactose free but I've tried it once and I like it more than normal milk.

  26. i seriously fell in love with pumpkin when i moved to Australia and discovered - they put it in everything! (year round too.) sandwiches, pizza, pasta, you name it. even the thai restaurant across the street uses it. :p
