Busy Schedule, Easy Meal, Lots of Veggies, and First Video Post Coming Soon

Sorry that I’ve been absent for the last week or so. As much as I love teaching, sometimes it completely takes over my life…

One of my priorities when things get hectic is to eat as many meals as a family as we can. We aren’t able to eat breakfast together every morning because I teach a very early morning class a few times per week, but when we can eat together in the morning, I try to make it somewhat special: scrambled eggs with sausage, bagel, strawberries, blueberries, and figs. We are lucky as my in-laws’ fig tree has awesome figs this year!

We also got a CSA delivery; most of it is already gone…

Meals have been easy, too. One of my recent finds is a rice/barely/spelt mix from Trader Joe’s. The box says it’s great for risotto, and that’s what I made with part of it. There are directions on the box, but I didn’t really follow them. But I think what I did was very similar.

I started by sautéing sliced mushrooms in some olive oil. In the meantime, I cooked one cup of the grain blend in some vegetable stock. After the mushrooms had cooked for a few minutes, I added  the mushrooms into the pot with the grain blend and cooked it until the water was absorbed (a total of about 15 minutes). Then I added some Parmesan cheese. That’s it. Hubby added some sliced basil leaves to his plate, and it was delicious. I’ll definitely add some herbs next time. I don’t think the texture and taste is exactly like risotto, but it’s good and a lot less work and a lot faster than “real risotto.”

The toddler recently got his first face painting. He was sooo excited. But he didn’t feel like posing for a photo… Oh well.

Lots and lots of salsa! I’m so excited to use it. I’ll make breakfast burritos with some of it, and I’ll post my first video blog about it over the weekend. I’m in the process of recruiting some “actors” (hubby, toddler, and my brother-in-law) as “tasters.” We’ll see how it all turns out…

    Salsa on a breakfast burrito is definitely the best combo!
    For fall foods, I am loving pumpkin! My coworker made pumpkin oatmeal the other day and brought some in! It was amazing!

  6. We have a lot of figs at the store, but they are on my no no list for my IBS, and it's so sad. I love them! But hey, if they are going to cause me pain it's not worth it. I've obviously been into pumpkin lately, and just today I bought my first pomegranate of the season!!

    The risotto looks amazing. I've never made it before but yours looks perfect. Isn't that the dish they always mess up on those cooking shows?! I think you've perfected it.

  7. I'm enjoying leafing through my cookbooks for braising dishes, as I can already feel the chill in the air. Braising is one of my fave ways to cook, and it really ushers in fall.

  13. Are you serious? The risotto is that creamy with only veg stock and some parmesan? Well, cheese DOES make everything better! :-)

    I have CSA envy. One day I'll do it. Love those heirlooms- man they are huge. And fun to have figs- they are sooo pricey!

    I read a stat in the UK that some crazy amount of kids (like 70% or more) never eat meals with their parents or sibs. AND, that a huge number of them do not eat at a table. So it's in bed or on a sofa while watching TV or surfing the web. Sad times. Good that you make it a priority!

  14. I am so excited to see that 3 grain blend and that it was nice, because I have that here. But I think mine went bad before I used it, so maybe I should check and get on it.

    Pumpkin drinks are not common here so I don't think I will be getting a pumpkin latte, until I go to Boston at least. I have been eating these cracker cookie things here like graham crackers, but the Portuguese version. I can;t stop eating them and I think it is becoming a problem :)

  17. I have been eating anything and everything pumpkin! Drinking a pumpkin ale as I type, even! :) I loooove fall! We just took Lily on a LONG walk and it was so brisk it!

    Those figs look amazing - I am jealous! I need to befriend someone with a fig tree...stat! :)

    I'm always happy that the Clementines are back in fall. And I love to eat "stamppotten": vegetables with mashed potatoes. We eat that once a week during Autumn and Winter because my hub loves it very much too.

    And I like oven dishes and Autumn/Winter is perfect for that.

    Lately I haven't been using my cookbooks much as I follow a plan but decided I will replace one meal of that plan with a "Stamppot" and one with a recipe from one of my cookbooks because I miss cooking from them.
