So here is how it all came about. I was selected through the Foodbuzz Tastemaker program in partnership with American Express to participate in the Dinner@6 program, and one of the rewards is a $100 American Express gift card to give to my readers! The challenge is to create a complete meal with six (6) ingredients or less. Salt, pepper, oil, and water may be used without counting as one of the six (6) ingredients. Now on to my six ingredient meal. Right away, I thought about a pasta dish. But I wanted it to be “unusual,” and I remembered a simple, “no recipe” dish I sometimes throw together. It’s quick, uses ingredients we all love, and everyone in our house loves the finished dish. I use cottage cheese to make the sauce, which turns out nice and creamy thanks to the melted cottage cheese. It also has bacon, which adds bacony goodness. And for freshness and nutrients, there are green onions and veggies.
Creamy, Bacony Pasta with Mushrooms and Peppers
6 Ingredients

- 27 ounces fresh “Asian”pasta (available in my regular grocery store in the produce aisle or in Asian supermarkets in the “noodle” and tofu section)
- 6 slices lean bacon, cut into thin strips
- 10 - 12 green onions, cut into slices
- 16 ounces cottage cheese
- 8 ounces mushrooms, sliced
- 4 bell peppers, sliced
- Salt and pepper, to taste (free ingredients)

Directions
- Boil the pasta according to the instructions on the package and drain.
- In the meantime, heat pan and add the bacon strips once the pan is hot. Cook for a few minutes, until the bacon gets slightly crispy. Drain excess grease.
- Add the mushrooms and peppers and cook for a few minutes.
- Add 3/4 of the green onions and cook until wilted.
- Add the cottage cheese, cook for a minute and then turn off the heat. Keep the cottage cheese in the warm pan until it is slightly melted.
- Mix the cooked pasta with the cheesy sauce.
- Sprinkle the pasta with the remaining green onions.
- Serve the pasta and enjoy!

ReplyDeleteFavorite six ingredient recipe? A Reuben! Rye bread, thousand island dressing, swiss cheese, corned beef, sauerkraut and butter to grill it!
Russian vinaigrette salad! Boil (skins on -- remove once cooled) and then finely dice beets, carrots and potatoes. Add finely diced crunchy dill pickles and red onion and a can of sweet peas. Toss with olive oil, salt and pepper. It is to die for.

4. Cooked ground turkey (or beef)
5. Mozzarella cheese
6. Garlic powder
Mix the tomatoes with cottage cheese and beef and alternate layers of no-boil noodles, cheesy beef mix, and mozzarella cheese. And then bake. Incredibly delicious and super easy.

Servings: 4
A third of a seedless watermelon, peeled and cut into 1-inch chunks
1 c. mixed small tomatoes, halved
1/4 c. red onion, diced
Juice from 1 lime
Salt and pepper, to taste
Mix all ingredients together in a large bowl. Refrigerate until ready to serve.

ReplyDelete1 can crushed pineapple, drained
1/2 cup peach or apricot preserves
2 Tbsp. lemon juice
1 Tsp. cornstarch
1 Center cut ham slice
Salt to taste
In a small saucepan, combine pineapple, prserves, lemon, and cornstarch. Mix well. Bring to a boil. Lower heat and simmer for 10 to 15 minutes. Broil ham on both sides. Spoon pineapple mixture on top. Heat until hot and bubbly.

heat oil, sear scallops couple minutes on each side remove from pan add chopped garlic and chopped cilantro for 1 min squeeze lime to deglaze the pan, return scallops to pan for another minute and serve over brown rice or greens, s/p to taste.
My favorite 6 ingredient dish consists of ground beef, diced green pepper, diced onion, tomato sauce, can of cheese soup, and macaroni noodles. My kids ate it up when they were little!

ReplyDelete1/4 cup lemon juice
1/4 cup honey
2 tablespoons reduced-sodium soy sauce
1 tablespoon sherry or unsweetened apple juice
2 garlic cloves, minced
4 boneless pork loin chops
combine the first five ingredients. Pour 1/2 cup into a large resealable plastic bag; add pork chops.
Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack.
over heat for 4-5 minutes on each side or until a meat thermometer reads 160°, basting frequently with remaining marinade.

Chicken Francaise- (Chicken cutlets, fresh lemons, butter, parsley, egg, flour). Dresge cutlets in flour then beaten egg. Pan fry in olive oil until golden brown on both sides. Finish cooking cutlets on 350 degree oven for 30 min. Meanwhile soften butter, add fresh squeezed lemon juice and chopped parsley. Spread butter mixture over cutlets. Place in oven to melt butter mixture. Serve over brown rice. Enjoy!

1 tsp extra virgin olive oil (or butter)
4 chicken breasts
2 cups of shredded Monterrey jack cheese
1/2 c onions (sliced)
1 c mushrooms (canned or fresh)
1 clove of garlic (minced)
1 pinch of Morton's seasoning salt
Heat oil in pan, add garlic and onions and cook til translucent, add chicken breasts and grill over medium heat until nearly browned on both sizes, sprinkle with seasoning salt and add mushrooms to pan. Turn heat to low, sprinkle each chicken breast with some shredded cheese, and then cover with skillet lid. Allow cheese to melt then serve immediately.

here's my fav. Pork chops stuffed with gouda and bacon

2 ounces smoked Gouda cheese, shredded
4 slices bacon, cooked and crumbled
1/4 cup chopped fresh parsley
1/8 teaspoon ground black pepper
2 (2 1/4 inch thick) center-cut, bone-in pork chops
1 teaspoon olive oil
Directions
Preheat an outdoor grill for medium heat.
In a small bowl, combine the cheese, bacon, parsley, and 1/8 teaspoon black pepper.
Lay the chop flat on cutting board, and with a sharp knife held parallel to the board, cut a pocket into the pork, going all the way to the bone, but leaving the sides intact. Stuff cheese mixture into pocket, and close with a wooden toothpick. Brush meat with oil, and season with salt and more black pepper.
Lightly oil the grill grate. Grill over medium heat for 5 to 8 min

My favorite 6-ingredient recipe is Baked Eggs with Tomato and Spinach: 8 eggs (separated), half an onion, bunch of spinach, can of diced tomatoes, Parmesan Cheese, Mozzarella Cheese.

ReplyDeleteI have this in the crock pot right now. 2 lb. boneless, skinless chicken breasts, jar of salsa, 2 T. chili powder, 1 t. cumin, 1 t. cayenne, 2 limes (squeeze the juice on then throw in the limes but remove the lime halves before eating), throw 1/2 bunch of cilantro on top and cook on low for 8 hours. Use for tacos or burritos.

My favorite 6 ingredients dinner is Creamy Asian Beef Noodle.
ReplyDelete8 ounces soba (Japanese buckwheat noodles)
1 1/2 pounds of skirt steak, cut in half or thirds to fit in skillet
1 pound(s) of snow peas, stem ends removed
2 tsp. of soy sauce
8 ounce(s) of 8 ounce Philadelphia Cream Cheese, softened
2 Green Onion, chopped
In a pot of boiling salted water, cook noodles until al dente. Drain and set aside.
Heat a large skillet over medium-high. Season steak with salt and pepper. Cook, turning once, until medium-rare, 3 to 5 minutes per side. Transfer steak to a cutting board and loosely cover with aluminum foil (reserve skillet with juices).
Add snow peas to skillet and toss with juices. Cook on medium-high heat, tossing occasionally until crisp-tender, 2 to 3 minutes. Add noodles, soy sauce, and cream cheese, cook until warmed through, about 1 minute. Transfer to serving bowls. Slice steak and place on top of noodles. Sprinkle with green onions and enjoy.

ReplyDeleteCrock Pot Creamy Italian Chicken
8 oz. Fat Free Cream Cheese
1 Envelope Italian dressing mix
4 Chicken Breasts (boneless)
1/4 Cup of water
1 Can of Healthy Request Cream Chicken Soup
1 Can of Mushrooms drained
Place chicken in crock pot
Mix water & dressing mix (pour over chicken)
Beat softened cream cheese and soup until blended in small bowl (pour over chicken)
Stir to combine all ingredients
**Serve over brown rice or whole wheat pasta**

ReplyDeleteMy go-to 6 ingredient recipe is!:
- 1 box corn/gluten free shells
- 1 cup cubed extra firm tofu
- 2 huge handfulls of fresh baby spinach
- A couple tablespoons of extra virgin olive oil
- About 1/4-1/2 cup graded Pecorino Romano
- salt and pepper to taste
Cook the pasta according to directions, lightly saute the cubed tofu with olive oil, toss the spinach in with the warm pasta once it has been drained, stir the spinach in with the pasta and add the rest of the olive oil, stir, toss in the tofu with the pasta, stir, toss the cheese in, stir, salt and pepper to taste… Enjoy!

ReplyDeleteMy fav 6 ingredient recipe is a quick pasta dish...
1 lb rigatoni
1 large onion, chopped
a couple of cloves of garlic, minced
1 lb fresh tomatoes, chopped
handful of basil, roughly chopped
1 lb fresh mozzarella
2 tbsp olive oil
salt & pepper
Cook pasta according to package instructions. While the pasta is cooking, saute the onion and garlic in olive oil over medium heat, then add the chopped tomatoes. Season with salt and pepper, to taste. Cut the mozzarella into bite sized pieces, drain the pasta (when it is al dente) and toss everything together. Top with the chopped basil and you are good to go!
