Weekly Meals & Outdoor Fun

It’s been a while since I posted our weekly meals. I still plan them every week in a little notebook and have also started to write detailed grocery shopping lists, something I never used to do. I only used to write down the meals but hardly ever itemized the ingredients I needed as well as pantry staples. Let’s just say that didn’t go so well and led me to not having some of the ingredients quite often.  I usually was able to make the meals without the missing ingredients, but I finally realized that shopping is a lot more productive with a list!

Meal 1: Tuna/avocado salad on a bed of lettuce
Meal 2: Bulgogi lettuce wraps
Meal 3: Grilled brie cheese sandwiches with carrot & celery sticks and avocado cream
Meal 4: Chicken dumpling soup with spinach (the chicken stock and dumplings are homemade, from the freezer. I love making a big pot of chicken stock most weeks and freezing part of it.)
Meal 5: Leftovers.

During spring break we took the kid and one of his friends on a 3-mile hike. The kids loved playing around in the woods, and we probably were the slowest hikers on the trail. But the kids had lots of fun and enjoyed nature, and that’s all that counts.

Questions: What’s on your menu this week? What exercise/physical activity do you have planned for this week? I plan on walking at least 70,000 steps this week, including at least one hike. I have also planned two barre classes and two weight lifting sessions.

  1. Love the bulgogi lettuce wraps, and my daughter would love the Brie grilled cheese :-) My kids start spring break this week, so I would love to get some hiking in with them too. We did just get back from a camping trip to Joshua Tree and had lots of fun climbing the boulders. Have a wonderful week!

  2. I like the look of your bulgolgi lettuce wraps! I, too, need to shop with a specific list, or I'll never get everything I need. I've been better about it lately, but I'm still working on planning more than five minutes before I go shopping :P

    This week we're making pea soup, tempeh wraps, chicken marsala, and something else I'm forgetting. Clearly I need a list! ;)

  3. My son is on spring vacation next week. We have already decided to make a stay-cation out of it and explore our area especially the outdoors. We will definitely go for a hike or two, hopefully play some tennis with our new rackets, and maybe some indoor rock climbing. I had to learn how to really slow down on hikes with my son. He loves being out there and doesn't complain, but he loves to explore, touch, pick up sticks and throw rocks.

    I have been hearing a lot about the barre classes lately. I keep checking to see if anything has opened in my area, but nothing yet.

  5. I plan to have macro plates for dinner this week. already had tonight and loved it! :)

    I'd love to take my baby for hiking when she can actually walks and walks for long.

  6. Grilled brie sandwiches?? Sounds divine! We have a shrimp salad on our menu this week, and lots of leftovers from out dinners last weekend (yeah, this week is mainly leftovers week!). As for workouts, training for a bike ride in June, so using the spinner lately!

  7. Love the pics! I am a boring eater.. eat a lot of the same things.. :) Exercise as well - in the gym BUT I mix it up when I am in there! :)

  9. Such pretty photos! We had our first day of shorts weather here in NJ! Yay! I made chicken chili tonight. It was supposed to be with rotisserie chicken but my dog nabbed the chicken so I had to use ground instead. Ai yi yi!

  11. Your menus always inspire me! I have been batch cooking one or two days a week and then we can eat off the leftovers. It's been working pretty well for me. Bean burgers, lentil loaf, butternut squash and bean chili and large salads have been on our menu.
