Spicy Tuna Avocado Salad & Life Update

Life has been busy, but we have been having lots of fun.

The weather has been quite nice, and we are spending lots of time at the park with the kid. I love how he gets so involved in his projects…


Soccer has also started up again, and the kid is excited. 


We also had some friends over the other day and did an early Easter Egg hunt with the kids. 


We had lots of good food, but the highlight of the evening was the Chocolate Fountain. I always wanted to have either a chocolate fountain or a chocolate fondue and finally bought a chocolate fountain. It was a lot of fun even though setting up the chocolate fountain will be a once-in-a-while thing as it takes a lot of chocolate. Still, I’m looking forward to using it at all kinds of special occasions.


I still plan our meals even though the meal plan doesn’t always make it on the blog.
While our dinners are varied and interesting, I have been in a lunch rut lately. I used to mix tuna, chicken, or salmon with avocado to make a salad and was recently reminded of it again. So I made some spicy tuna avocado salad, and it was a nice change.

Spicy Tuna Avocado Salad

Ingredients
  • 1 can tuna
  • 1/2 small avocado
  • Juice of 1/2 lemon
  • Tabasco to taste
  • Salt and Pepper to taste
Instructions
  • Cut the avocado into pieces and smash it with a fork.
  • Add lemon juice, Tabasco, salt, and pepper and mix well.
  • Add the tuna and mix well.

I ate the tuna salad on a bed of greens with roasted Brussels sprouts. It was a quick, easy, and delicious lunch.

  1. It sounds like you've been having a lot of fun lately! I'm loving your chocolate fountain and that's definitely on my "to buy" list, so I'm glad you like it! Your spicy tuna avocado salad looks like the perfect way to break out of a lunch rut :) I love avocados with just a drizzle of sweet balsamic vinegar, although it's been a little while since I've had it.

  2. Hi Andrea! Oh, that sounds good. I love avocado and tuna. And it's a recipe that a non-cooking type person like me can do well. Thanks for the idea!

    The pics of your son remind me of my younger two kids in soccer. They grow so fast. You have to try to absorb it as much as possible, because next month they have already grown up quite a bit. :D

  4. Oh Andrea, your kid is getting big...so cute, and so active!
    I like the idea of not having to use the stove...avocado and tabasco...I will have to try this next time opening a can of tuna.

    I take my avocado & add salsa, hot/sweet mustard, spirulina powder & I have my own homemade guac! :) I add that to my tuna!!!!

  6. I never even tried an avocado until about six years ago - I missed out for so long!

    I love buying the Wholly Guacamole packs at Sam's Club - you can freeze them and you don't have to worry about buying an avocado that's bad - which I do routinely!

  7. The Toddler is growing sooo fast!!! Unbelievable!

    I like avocado in salads, mashed preferably. I've been eating salads for two weeks and will continue to do it because it's easy, fresh and I love all the crunchiness. :)

  8. Love the soccer photos-so fun! We are immersed in baseball and softball season right now, so it's a busy (but fun) sports season! LOVE avocado, although I didn't as a kid. Fortunately my kids love them, so we eat them a lot on salads, in guacamole, on sandwiches, and 2 of my favorites are sliced avocado on toast w/ olive oil, salt and pepper, or smashed together with chickpeas, salt and pepper, then spread on a sandwich with tomatoes, and micro greens.     1. The kid loves avocados, too, and often eats some plain. I love sliced avocado with toast! I also like your idea to smash some with chickpeas and use it in a sandwich.
