Healthy Fake Baked Potatoes And Giveaway Winner

Yesterday’s lunch was so simple, yet so good. I fake baked (= microwaved) a couple of potatoes and then served the potatoes with leftover Anytime Anything Salsa and Doctored Up Greek Yogurt.

Doctored Up Greek Yogurt
  • Fat-free Greek Yogurt
  • Green Onions, chopped
  • 1 shallot, finely chopped
  • Cilantro, chopped
  • Juice of 1/2 small lemon
  • Salt
  • Pepper

Hubby actually asked, “What did you do to make the yogurt taste like sour cream?” Honestly, I don’t think Greek yogurt stands a chance against sour cream in a side-by-side comparison. But, when you just eat it seasoned without tasting sour cream at the same time, it’s absolutely delicious and very healthy.
I sprinkled a bit of shredded cheese on each potato.


And then added some of the leftover salsa.


followed by the Doctored Up Greek Yogurt.


A quick, healthy, and satisfying lunch!

  3. I tasted Greek yogurt once and I loved it. Sadly, I cannot get it here.

    I had vegetable barley stew for lunch. It was vegetable barley soup until I left it in the slow cooker too long! Interesting cooking technique, no?

  4. I just love when you post pics of the toddler!!

    I do often use Greek Yogurt in place of sour cream. I do think it tastes different, but such a great alternative.

    My boss brought in lunch from a local pizza place!! It was delish!

  5. I gotta try that. As much as I love my microwave, I think I underuse it quite a bit. lol. I know it can be very useful in other aspecting of cooking aside from reheating leftovers.

  8. I LOVE Greek yogurt. In fact, in the summer I often have it for lunch with a lot of fresh berries or peaches thrown on top, along with a handful of toasted nuts. So satisfying and good for you.

  9. Humm. Potatoes. Somehow when i'm pregnant it's the only thing that doesn't make me sick so that makes them my current favorite. I think that's what cravings are, just the one thing that actually sound good. Greek yogurt. There are a million ideas that pop in my head when i think of possibilities and it's...ok i could really go on forever. Thanks for another great idea.

  10. I love Greek yogurt. I have it almost every morning for breakfast with a banana and some Kashi cereal. I've also used it as a sub for sour cream, although never "doctored" up like this. Great idea!

  11. This looks amazing!! Seriously, loaded potatoes are one of my favorite go-to meals. And, I absolutely love using Greek yogurt instead of sour cream, and/or mayo.

    The "before" picture of your son with the sombrero is classic. I can read his mind.."Mom, take the darn picture so I can draw a name already!"

  12. I just saw someone recommend the greek yogurt to replace sour cream on Dr. Phil today. It is a great idea. My favorite on the potato is cottage cheese with broccoli. I also like salsa on them. Congrats to the winner.

  13. I LIKE greek yogurt but I'm afraid it is too expensive for my budget. I kind of gave up dairy (semi) so I only eat organic plain yogurt on occasion!

  15. I like Greek yogurt even though I was never a yogurt fan. I serve the plain kind as sour cream but don't tell the family. No one can tell the difference!

  16. I love Greek yogurt, but if I ate it as often as I want, I'd go bankrupt.

    The toddler is seriously going to be a heart-breaker one day. He's gonna grow into a handsome young lad! ;-)

    I think Greek yogurt tastes like sour cream, but I guess I've never done a side-by-side comparison. And I probably won't so that I can keep tricking myself ;)

    Lunch today is leftovers: Mexican Chicken Casserole and corn!
