Weekly Meals (8/25 - 8/28)

I can't believe summer is almost over. Here are a few more favorite summer moments...

On to this week's meals:

: Taco Salad - When I made this salad before, everyone loved it. I can't wait to eat it again.

Wednesday: Oven roasted vegetables, grilled shrimp, & spinach salad.

Thursday: Pasta with tomato sauce - not sure yet if the sauce will consist of quickly sauteed garlic & tomatoes, or if I'll cook the tomatoes for a while and make a tomato sauce. We'll also have a salad.

Friday: It's "Salad Friday." I'll make an "Assortment of Salads:" carrot, celery, tomato/cucumber...

    My favorite meal yesterday was Zucchini Chickpea Quesadilla. The asiago cheese was the best part!

  2. My favorite meal yesterday was actually part of lunch and part of dinner. Both very simple:

    special K with redberries, chopped pecans
    salad: spinach lettuce, mushrooms, cherry tomatoes, beets, olives, red peppers, oil and red vinegar.

    nothing fancy, but it was so yummy!

    I made Eggplant Parmesan (for the first time) it ended up being a bit rushed as it was getting late but SO SO SO YUM.... Definately doing that again.

    He is soooo sweet!!

    Hmm... fave meal yesterday, was snacky yesterday so didn't have any big meals, i'd say the lemon-zucchini bread I can't seem to stay out of! LOL!!!

    Tonight though i'm making a nice big dinner! Roasted chicken, potatoes, carrots, brocolli, cauliflower, etc... YUM!!

  7. I used to make up a menu plan all the time but got out of the habit. I'd really like to start it up again, though.

    My fave meal was my salad at lunch yesterday. DInner tonight will be grilled chicken breast and zucchini. Yum!

    Love those toddler pics! Pics of kids eating fruit warm my heart.

    My fav meal yesterday was probably breakfast! Lunch for salad today, not sure yet what's for dinner tonight. I feel like a dope saying that when you've got your whole week of meals planned out! I totally admire your meal planning.

    Love the pics! Today's lunch was actually really good - sweet potato bisque! The combination of flavors was amazing - I'll be posting the recipe tonight.

    And I could have taco salad every day and never get sick of it!

  12. Yesterday my favorite meal was the pizza and calamari I had at a local restaurant called Marcellas. It was to die for.
    Tonight for dinner I made a random combination with flavored tuna, grilled veggies (carrot, celery, broccoli, sugar snap peas, mushrooms) and swiss cheese! Random? Yes. Tasty? VERY!

  13. i had a lot of leftover rice so i combined that with my fave freezer staples - meatless meatballs and spinach. yum.

  14. hehe love the pictures! And salad Friday - awesome - can't wait to see what you cook up (with your interesting salads and all!). Yesterday my favorite was easy red curry Thai! Tomorrow i'm having red curry again (different recipe!) for lunch and for dinner I made a pasta that i'm going to eat at work before I go to the movies!!

    For dinner tonight I had Pizza wraps. Flour tortillas with ham, cheese, pineapple, pizza sauce and tomatoes. A quick and easy meal that I can pull together in about 7 minutes. ;)

    Yummy meal plan (again! :-) I actually wrote out meals for this week on the calender (inspired by you!)

    Yesteday (and today), I had an Ezekiel English Muffin topped with whipped cream cheese, walnuts and honey (does that count as a meal?)

    The girls had healthy spag and meatballs tonight and they LOVED it. It felt good to prepare a meal that all three of them really enjoyed!

  17. What sweet pictures!! I love how your write out your meal plan on the blog! Seems like something I should try to keep me accountable :) Last night I made a concoction, lol! Turned out great, stew made with lamb, onions, garlic, Spanish chorizo, eggplant and sweet potatoe leaves. Super yummy stew :)
