So when I saw Jenn at Bread + Butter post a recipe for Baked Parmesan Sweet Potatoes I had to try it! And let me tell you, they turned out great. They were sweet yet savory due to a little salt and the Parmesan cheese. Hubby actually said the following: "For me, the sweet potato fries alone would be the perfect lunch." Thanks, sweetie... I'll take it as a compliment!
Anyway, if you like sweet potatoes (or even if you don't), try these fries. They are awesome. Just watch them very carefully towards the end. I think I ended up baking mine for about 25 minutes, and they were quite dark (but perfect!). If you haven't checked out Jenn's blog, I would suggest you do. She posts the most amazing recipes! Plus, her pictures are absolutely beautiful...
