Green Soup and Star Wars

We start most days with plenty of greens in the form of a green smoothie. My second favorite way to get lots of greens is a green soup since I can make a big pot on the weekend and enjoy it for most of the week.

I started making vegetable-based soups every week when I did the Conscious Cleanse for the first time a little over a year ago, and this recipe would be suitable while you are cleansing. But it’s a delicious soup anytime and you can feel good about getting lots and lots of greens.

While I make similar soups most weeks, this combo worked out really well as it’s nice and balanced. And I was really just cleaning out the fridge… Winking smile

Green Soup

Ingredients
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 2 heads of broccoli, chopped
  • 1 small bunch collard greens, taken off the stem and chopped
  • 1 small bunch Swiss chards, taken off the stem and chopped
  • 6 cups vegetable broth – more broth if you like your soup soupier
  • Salt and pepper to taste
  • Olive oil
Instructions
  1. Heat the olive oil in a medium pot and add the onions when the oil is hot and cook for a few minutes.
  2. Add the broccoli, collard greens, and Swiss chard and sauté for about 5 minutes, stirring a few times.
  3. Add the vegetable broth and simmer the soup for about 20 minutes.
  4. Turn off the heat and puree the soup with an immersion blender.
  5. Season with salt and pepper to taste.

If you follow me on Instagram, you may already know that we visited the Star Wars Exhibit on Friday afternoon. We all loved it, and it was the highlight of our weekend.

    I like Broccoli-soup,last week I have cooked grean pea-soup,in lower-saxony there gives many grean-kale,a special kale.
    Am Sonntag habe ich Moorschnuke, Steinpilze und Klöße gegessen,alles aus der Region.Meine Patenkind Familie hatte eingeladen und wir haben alles gemeinsam zubereitet,die Kinder haben den Tisch gedeckt.

  3. The title of this post made me laugh :) What a yummy way to get your greens! I might leave out the celery (ha! :P ); otherwise, I can see this as a hot or cold soup, depending on the weather.

    The exhibit looks fun! I remember going to a Star Wars exhibit when I was a kid and just loving it. Glad you had fun :)

  5. I love the color of that soup! I just tried baby kale last week and it's pretty good - still haven't tried collard greens though!

    Spending time with my honey on Friday during the day since I took the day off, and then yesterday sleeping in - felt wonderful!

    1. Collard greens can have a strong flavor, so I like to add them into a dish with lots of other flavors to mellow them out a bit...

  8. My family loves green vegetables so we've never had any trouble trying to eat them haha :) I've never had green smoothies or green soup before...but they sound pretty good!! Must give it a try some time!

    1. We love vegetables, too. :) But I have found that if I have easy to grab or already cooked foods with tons of greens (like this soup), we eat even more of them.

    1. Yes, getting your greens definitely makes a difference. I once read that getting enough greens helps with not having cravings for sweets, and I think it works for me! :)

  11. I have never had a green smoothie and I don't think I ever will either. It just isn't attractive to me.

    I eat green veggies in salads, cook it or use it in the oven.

    Looks like a fun trip and I can imagine it was a great highlight of your weekend.

    1. I was very skeptical about green smoothies, too, and if you get your greens other ways, there is certainly no need to have them.

      However, I think you may actually be pleasantly surprised if you ever have one. If you use a banana and some frozen fruit (I love mango pieces) in it, you can't really taste the greens. :)

  13. I love easy, green soups like this! I've got some leftover broccoli in the fridge, so I'm thinking I may need to make some soup tomorrow :-). Other favorite ways to get my greens in are smoothies and salads. I had a spinach salad for lunch AND dinner today. Yum :-)

  14. Greens are yum for everything else from smoothies to soups! But for the cold wintery days, soups are great to have around! I prefer my soups to have a bit of texture, but I love collard greens though! I love my greens steamed with rice and some nice dressing/sauce on it. No highlights yet... I'm currently fighting the cold during my trip in Boston...and will be returning tomorrow, hopefully I will feel better soon!
