I made grilled salmon on a bed of baby greens for dinner and (for once) didn’t feel like eating the exact same meal again. I therefore took the leftover salmon and turned it into salmon salad.
Salmon Salad Sandwiches (enough for 2 sandwiches)
Ingredients
- 1 Grilled (leftover) wild salmon fillet
- Juice of 1/2 Meyer lemon
- 1 tablespoon Wasabi Mayonnaise
- 1 tablespoon capers
- Baby greens
- 4 Slices of toasted bread (I used Alvarado St. California Style Complete Protein Bread)
A tasty lunch!
