Weekend Fun and Weekly Meals

Our weekend was low-key and relaxing, just what I needed. Unfortunately, after feeling better last weekend, I felt quite sick again by Monday night. And by Wednesday I had almost lost my voice. No fun. So my exercise plan didn’t work out again. It was frustrating, but I kept reminding myself that I had to rest if I wanted to get better. I did do some yoga every day, and on Friday, I was finally well enough for an 8-mile walk.


We stopped half-way, and the toddler and I chased followed some birds around.


On Saturday, the toddler and I went for a 4-mile walk. I really enjoyed getting back into walking more. I know the toddler’s days in his stroller are numbered, but I’m determined to get as many walks in as he’ll let me in the next few weeks! Smile

On Saturday, we checked out a local food truck event. It was quite chilly, but lots of fun.

The banh mi sandwich and sweet potato fries from littlegreencyclo were amazing.


And we loved the ice cream from Treatbot. That’s Ryan from Treatbot.



Since the toddler was tired, we had to head home pretty early.

On to this week’s meals.

Meal 1: Stir fry with onions, celery, carrots, bok choy, and tofu, seasoned with sesame sauce, sesame oil, rice vinegar, and sesame seeds.
Meal 2: Brown rice pasta with tomato sauce and meatless meatballs and a salad.
Meal 3: Carrot and chickpea stew with dill – this was on last week’s menu, but since I didn’t feel well, I never got around to making it.
Meal 4: Quesadillas with avocados, tomatoes, and lots of cilantro.
Meal 5: Veggie burgers – I’ll play around a bit with this veggie burger recipe.

When it comes to workouts, I’ll shoot for what I had planned for last week (but couldn’t do since I was sick) again.
