Weekend Fun and Weekly Meals

Our weekend was low-key and relaxing, just what I needed. Unfortunately, after feeling better last weekend, I felt quite sick again by Monday night. And by Wednesday I had almost lost my voice. No fun. So my exercise plan didn’t work out again. It was frustrating, but I kept reminding myself that I had to rest if I wanted to get better. I did do some yoga every day, and on Friday, I was finally well enough for an 8-mile walk.

We stopped half-way, and the toddler and I chased followed some birds around.

On Saturday, the toddler and I went for a 4-mile walk. I really enjoyed getting back into walking more. I know the toddler’s days in his stroller are numbered, but I’m determined to get as many walks in as he’ll let me in the next few weeks! Smile

On Saturday, we checked out a local food truck event. It was quite chilly, but lots of fun.

The banh mi sandwich and sweet potato fries from littlegreencyclo were amazing.

And we loved the ice cream from Treatbot. That’s Ryan from Treatbot.

Since the toddler was tired, we had to head home pretty early.

On to this week’s meals.

Meal 1: Stir fry with onions, celery, carrots, bok choy, and tofu, seasoned with sesame sauce, sesame oil, rice vinegar, and sesame seeds.
Meal 2: Brown rice pasta with tomato sauce and meatless meatballs and a salad.
Meal 3: Carrot and chickpea stew with dill – this was on last week’s menu, but since I didn’t feel well, I never got around to making it.
Meal 4: Quesadillas with avocados, tomatoes, and lots of cilantro.
Meal 5: Veggie burgers – I’ll play around a bit with this veggie burger recipe.

When it comes to workouts, I’ll shoot for what I had planned for last week (but couldn’t do since I was sick) again.

    The highlight of mine was seeing my boss get married! This week we're eating lots of new yummy recipes - so excited to make them! I have a lot of running, walking, spinning and ST planned for the week!

  3. It is sooo pretty there! I bet walking with the toddler in the stroller is wonderful :) Time with the family while exercising - you can't beat it!

    The quesadillas on the menu sound wonderful! We're having lots of grilled meals this week - keeping it simple and outside! :)

  4. I could go for some of that ice cream at the end! I love being outside, and being with family outside (and ice cream) is the best. Looks like a great weekend!

  5. I often forget how enjoyable it is to go walking instead of running! So nice! The toddler was a trooper for hanging in there for the 8 miler!!!

  9. Sorry to hear you were sick last week. No fun. I know it's going around here too because our clinic at work has been PACKED!
    The highlight of my week was my dinner with my mom. It was just a really nice, relaxing time, and an easy, yet delicious meal.

    Your weekly menu sounds great, especially those cilantro filled quesadillas!

  10. Glad that you finally ended up with a 8 miles walk. That is a very lovely park though, with all those birds around. Your toddler must be having so much fun! ha. Btw, that ice-cream is so so very seducing. :o) Btw, Happy Belated Mother's Day to you too , Andrea dear.

    Sorry to hear that you didn't get well even you didn't work out much, but give your body more time, it will recover soon for sure, :)

    Highlight if my weekend was going to an adventure park, so fun!

  13. I enjoy long walks like that too! Oh it's terrible when the toddlers no longer want to sit in the stroller. You'll have to figure out something new. We had one of those tandom bikes for our kids. It hooked on to the back of our bike and they could peddle or not, it was awesome.

    I plan on walking more this week!

    Low-key weekends are my favorite! The highlight of my weekend was getting to spend some much needed girl time with my mom for mother's day :)

    All of your meals sound amazing, as always!! That ice cream looks especially wonderful! :)

  16. I love to walk as well. Your meals look great. Almost every week my list has something on it from the previous week. Inevitably something comes up and I don't get around to making something!
