Leftover Makeover: Grilled Salmon Morphed into Salmon Salad Sandwiches

I don’t mind leftovers. In fact, I usually love them. Unfortunately, not everyone in my family shares this enthusiasm for leftovers…

I made grilled salmon on a bed of baby greens for dinner and (for once) didn’t feel like eating the exact same meal again. I therefore took the leftover salmon and turned it into salmon salad.


Salmon Salad Sandwiches (enough for 2 sandwiches)

Ingredients
  • 1 Grilled (leftover) wild salmon fillet
  • Juice of 1/2 Meyer lemon
  • 1 tablespoon Wasabi Mayonnaise
  • 1 tablespoon capers
  • Baby greens
  • 4 Slices of toasted bread (I used Alvarado St. California Style Complete Protein Bread)

 A tasty lunch!
