Veggie-Filled Weekend

Our weekend was filled with fruits and veggies thanks to our CSA box.

Here is what we got, and what we did/will do with it:
  • Pears – They are just slightly soft, which is the perfect ripeness for me. We already ate all but one.
  • Apples – We already ate them all. Actually, the toddler insisted that they were “his apples,” but he shared a few slices…
  • Minneola Tangelos – Hubby and the toddler each took one in their lunch today. I’m sure we’ll eat the rest soon.
  • Leeks – I used the leeks in my “clean out the fridge soup.”
  • Red Kale – I made kale chips. Unfortunately, there was no time to take a picture as we were so excited to eat them! Smile
  • Carrots – They went into my “clean out the fridge soup.”
  • Cauliflower – I cooked the florets in a bit of vegetable broth until they were soft. Then I smashed them up and added a wedge of laughing cow blue cheese. 
  • Leaf Lettuce – We ate the lettuce dressed in a simple vinaigrette.
  • Radicchio – We’ll have the radicchio tonight.
  • Onion – It went into the “clean out the fridge soup.”

  • Leeks

  • Carrots
  • Mushrooms
  • Potatoes
  • Leftover butternut squash
  • Vegetable broth
  • Frozen garlic, cilantro, and basil cubes
  • Salt and pepper

I pureed the soup when it was done, but I had a cup chunky, and it was really good, too.

Here are some photos of the winter sky around noon on Friday. I loved the moon and how “spooky” the sky looked.

Questions: What was the favorite thing you ate over the weekend? We loved the salad from the CSA box. Did you do anything exciting over the weekend? We hiked to a nearby animal farm. It was quite cold (low 30s, which is cold for us, especially since we don’t have “real” winter clothes…), but it was lots of fun.

  1. I made pizza for the first time in a couple months - worth all the points for it too!

    And it was cold, so not a lot of outdoor activities, but great to stay inside and cook. :D

    I feel like I always make the best recipes when they are the 'clean out the fridge' ones! It makes me not afraid to experiment : )

  5. I know this isn't a response to your question, but...I have a question and I'm envious!
    I looked online and there isn't a single CSA in my area. But I did find a fresh fruit/veggie market about 30 minutes away and my husband says he'd be happy to make the trip...Yeah! (That's the envious part)
    My question, the photos you took were at noon? They were beautiful but looming, loved them :o)

    The most exciting thing this weekend was making dumplings with my friends, and watching the Hair musical for free! :-)

  7. Your "clean out the fridge" soup is a great idea, and so creative! After weeks of cold sandwiches, I'm on a soup kick (just made sweet potato soup over the weekend), and I'll have to try cleaning out my own fridge!

    Those pictures are amazing and so professional! I can't believe that was really noon - it looks like midnight on Halloween!

  8. I still can't get over the abundance of amazing food you get in your CSA box. I wish Ohio CSAs were like that!! Such a colorful mix.
    The photo of the moon is beautiful. This time of year brings a lot of great picture opportunities like that.
    This weekend I worked, and worked, and worked, but had a blast doing it :)

    we didn't eat or do anything exciting. I was kind of hole ourselves up inside kind of weekend.

  12. I love the clean out the fridge soup. What a great idea! I did that today and had a few spare mushrooms added to my lunch. I forgot they were there and I bought some yesterday that weighed our for a recipe (not sure the weighing was necessary but I always go overboard on the mushrooms) and I couldn't let them go to waste.

    We went for a forest walk on Sunday.It was a beautiful day for it and we were not the only ones who thought about that.

  17. Great soup! The best thing I have eaten lately is a roasted butternut squash and bacon pasta dish I made. It is creamy goodness in every bite.

  18. Wow, that sounds super good. Love the fresh produce.

    I made a turkey and wild rice soup this weekend, using the turkey broth I made from the remains of a Christmas carcass (goodness, that sounds so morbid). I added some peas and carrots for extra veggies :) It's deeeeeelicious!

  21. I wish we had a winter CSA here! I'm really really missing our farmers' market. :(

  22. tonight will be my favorite thing i'll have eaten so far- a HUGE stir-fry with lots of greens, squash, chickpeas, tofu or chicken, seasonings..mmm its weird how healthy stir-fries make me salivate lol
