Lately, our favorite meal has been quinoa salad with roasted vegetables. We love the flavor and texture of quinoa, and it’s easy to change the dish up a bit by making different dressing and using different vegetables.
Last week, I roasted green beans, a yellow pepper, an orange pepper, and a red pepper. Prior to roasting, I tossed the veggies with some salt & pepper and Rosemary Garlic Oil. The oil is one of my recent Farmers’ Market splurges, and it is sooo good. It gave the veggies such a nice flavor, and the kitchen smelled like rosemary while I was cooking them.
I cooked the quinoa for about 15 minutes in vegetable stock, which added some flavor. Once the veggies and the quinoa were done, I simply tossed the salad with a bit of brown rice vinegar and a bit more oil. It was simple, delicious, and flavorful.

Tuesday: Shrimp in lemon/garlic butter over quinoa (Yes, I may be mildly obsessed with quinoa…)
Wednesday: Lentil soup.
Thursday: Chicken fajitas wrapped in lettuce. I think I'll actually have veggie fajitas, but the guys will have some chicken...
Friday: My brother-in-law will be in town, and we’ll go out for dinner.
