The Week of the Spaghetti Squash

In the past few weeks, I have seen spaghetti squash everywhere, and I kept on thinking that I really “had to buy and make one” as I had never made one before! So last week was the week. Apparently, Annabel from Feed Me I’m Cranky bought the exact same squash (well, not the exact same one of course, but she bought hers at Trader Joe’s as well) on (pretty much) the same day I did and made it the same way I did (according to the instructions on the sticker: microwave for 12 minutes, take out the seeds, take out the “spaghetti” with a fork - this part is a lot of fun!). I served the squash with a simple marinara sauce (out of a jar) along with some chicken in lemon caper sauce. I actually only had the squash and the marinara sauce with a bit of Parmesan cheese, but the guys had the chicken with it.



I think the guys thought it was “okay,” but they tried to be polite. I really liked it, but I totally didn’t expect “spaghetti” but rather a squash dish (and I think that was the key to really liking it).


Later in the week, Alison from Mama’s Weeds also made spaghetti squash with a much more interesting sauce. She made a homemade marinara sauce with sundried tomatoes, artichoke hearts, & pistachios. I can’t wait to try her sauce with the squash!

Tuesday: Salmon in lemon dill sauce, wild rice, & cucumber salad.


Wednesday: Something with kabocha & sweet potatoes. They have to be used up… Any ideas?


Thursday: Carrot Ginger Soup.


Friday: Taco Salad.
