Winter Veggie Love & Chicken With Almond Butter Sauce

I really like to eat the same food over and over and over again. If I like something, I could easily eat it every day without getting tired of it for a very long time. Unfortunately, the same cannot be said for my family, so we do have quite a bit of variety in our meals. But I still often eat the same lunch the entire week…


For the past few weeks, I have been obsessed with roasting veggies. So the other day, I made dinner using some old friends: sweet potatoes & Brussels sprouts. I would have been more than happy with just roasted veggies and a salad, but I thought the guys would like some chicken. At first I wasn’t sure what to do with the chicken to make it a bit more “interesting,” but then I whipped up a very simple almond butter sauce. Here is what I did:

Roasted Veggies with Parmesan Cheese:

  • Cut Brussels sprouts in half and sweet potatoes into fries
  • Toss with a bit of oil, salt & pepper
  • Bake at 375 degrees for about 35 – 40 minutes; after about 25 minutes flip the veggies over and sprinkle them with a bit of Parmesan cheese

Chicken with Almond Butter Sauce

  • Cut two organic chicken breasts into small pieces
  • Sauté the chicken in a bit of oil
  • Let the chicken cook for about 10 minutes, or until it is cooked all the way through
For the sauce whisk together the following:
  • 2 teaspoons sesame oil
  • 1 teaspoon low sodium soy sauce
  • 2 tablespoons almond butter (or more, if you like a “nuttier” taste)
  • 4-6 tablespoons warm water – I started by adding just two tablespoons and whisked the ingredients together. I added more water to make the sauce a bit runnier.

Pour the sauce over the chicken and let the sauce and the chicken simmer for a few minutes. You may want to add a bit more water if the sauce gets too thick. Serve the chicken with the veggies.
