A “New” Veggie To Roast

I can’t believe I have never cooked/baked/roasted/bought a butternut squash before. Hubby couldn’t believe it either… Anyway, the other day, I finally bought one.

At first, I was going to make some butternut squash soup - a soup I actually frequently order if it’s on the menu in a restaurant. And I also have a good friend who makes a very delicious butternut squash soup. But then my love for roasted veggies won, and I made butternut squash “fries” instead.


I started by peeling the squash, taking the seeds out, and cutting it into “fries.” Actually, many of the pieces looked nothing like fries… I then tossed the squash with just a bit of oil, salt, pepper, & freshly cut rosemary.

I baked the squash at 375 degrees for about 40 – 45 minutes, turning it a few times. After the squash “fries” were baking for about 30 minutes, I sprinkled a bit of Parmesan cheese on them.


And here are the finished “fries.” They were very good.
