Weekly Meals (June 30 - July 3)

The Spring quarter ended last week, and this is the first summer EVER that I'm off (well, sort of off, as I am working on a couple of projects, but they are fun, so I don't really consider them to be work...) So I almost didn't plan meals for this week. Almost. I soon realized that with my projects, which require at least three to four hours of work each day (the toddler's nap time and after he is asleep at night), and the toddler being the toddler, I do need to plan meals in order to make meal time stress-free, balanced, and enjoyable for everyone. Plus, I find more and more that meal planning saves money! So here are this week's meals:

Tuesday: Pasta with tomato, almond, basil pesto & a salad.

Wednesday: Vegetable curry. We picked up some carrots, potatoes, leeks, & onions at the Farmers' Market. We are also planning on shopping at some mid-week markets; I can't wait to see what else we'll add to the curry.... Did you make it to the Farmers' Market? If so, what did you get? I have been bad about taking pictures of my Farmers' Market purchases, but I'll be better... :o)

Thursday: Lentil soup. I'll be "cheating" a bit as I'll be using cooked, refrigerated lentils from Trader Joe's to make the soup. I usually like to cook my own lentils, but I want to spend as much time as possible with the toddler outside enjoying the beautiful weather, so the cooked lentils are perfect! I'll also use organic vegetable broth as well as some fresh onions, carrots & celery from the Farmers' Market. I'll top the soup with some non-fat Greek yogurt that's seasoned with lemon juice, salt & pepper.

Friday: Vegetable & brown rice salad with fresh corn. I'll be experimenting here... I'll let you know how it turns out... :o)
