Weekly Meals & Weekend Fun (November 9)

Andy and I are excited that we get to enjoy a long weekend. Unfortunately, it’s going by way too quickly…

We started the weekend early with a lunch date on Friday. We hadn’t really celebrated our anniversary in June as things were really hectic at the time. We therefore decided to go out for a nice lunch. I usually don’t like to splurge on expensive alcohol in a restaurant, but the rose sparkling wine was a nice treat.

And we got to go on another date on Saturday because the kid was at a sleepover. We went back to Yucca de Lac in Stanford Shopping Center. I couldn’t believe that the Christmas trees were already up! Yucca de Lac is a nice relaxing place, and I love that I can do a little shopping while we are there!

I actually got a nice winter coat on major sale at Banana Republic; it was originally $359 and with an extra 30% off the sale price it came to $89. I’m going to spend two weeks with my parents in Germany in December, so a truly warm coat (and not a “fake California coat”) is a must. Here is a shot of the back of the coat; Andy insisted on taking the photo in the middle of the store to prove to me that the coat was too big. But I didn’t think so. It’s roomy, but I’ll need some room to add extra layers; it's likely to be quite cold, and I get cold easily, so I'll have to have room for thick sweaters and multiple layers. Plus, the coat is a small and the sleeves of the extra small were too short. I’ll show you the front of the coat in a future post after I have a chance to take some photos.

Here is what’s on the menu this week:

Meal 1: Spaghetti Squash Casserole.
Meal 2: Black bean burgers & roasted veggies.
Meal 3: Grilled salmon & a salad.
Meal 4: Leftovers - I’ll make extra food of all dishes for lunches as well as leftovers. There are also several portions of soups and stews in the freezer which we’ll have to eat soon.

Questions: What was the highlight of your weekend? What’s on your menu this week?

Be well,
Andrea

    1. Yes, I'm very thankful that I get to go. My parents have been visiting us for a couple of weeks in December for the past few years. Sadly, this year this won't be possible since my dad suffered a severe stroke in March. He is doing better, and I'm very thankful for that. I'm glad to be able to spend time with my parents, but I'm also a bit conflicted as I know the kid really would love to go (which isn't possible) and will miss me, and I will miss the boys...

And, yes, I have been thinking about how grateful I am for all I have. Life is not perfect, but there is soooo much to be grateful for!

  5. We're having grilled salmon on Wednesday too! Always always plan my weeks meals. How fun to have that time together this weekend and what a pretty coat! My husband and I would love to get back to Germany. He was stationed there a couple decades ago and I visited Munich as Austria too many times. ;-)

    1. Yes, meal planning is a must for me to stay (somewhat) sane... :-)

I love aspects of visiting Germany in winter (family, Glühwein, etc.), but I'm dreading the cold...

  6. You are going to be glad you have that great coat! I've been in Germany in November, and it was cold. My hosts showed me this special insulated room they have for the real frigid winter weather :-)

    1. Yes, I'm not looking forward to the cold weather... After living in California for almost 25 years, I can't handle it very well anymore... It was indeed very important to get a "real" coat. I hope it'll keep me warm enough...

  8. I didn't really do much this weekend, but sometimes that's nice too. I am doing my first week of Blue Apron so don't have to think as much about meals!

Are you going to blog about Blue Apron? Would love to read what you think!

  9. Glad you had a lovely anniversary celebration, even if it was a little late! :)

Your new coat looks lovely too - looks like a cocoon style so it will be a little bigger over the shoulders - not too big at all, like you said it will be perfect for layering things under!

And, yes, it's a cocoon style; I think that's why my husband didn't like it at first. He is getting used to it though... :-)

  10. Okay...the Christmas trees up is scaring me. Christmas comes far too soon for my tastes.

I do hope you enjoy Germany. Visiting family for the holidays is always nice.

    1. Yup, the Christmas trees seemed really out of place!

And, yes, I'm very thankful that I get to visit during the holidays, especially since it'll be the first year that my parents won't be able to visit us.

  11. Fun weekend! It's hard to beat sparkling wine at lunch :-) The highlight of my weekend was going to see Garth Brooks with my husband and kids. I don't usually listen to a lot of country music, but he put on a fabulous concert, and it was fun taking the kids to their first "big" concert. Have a wonderful week!

  12. My rule is : never forget to celebrate an anniversary! And a long weekend out is a fantastic way to enjoy the date!!
Of course, in Germany you will need something warm and your coat will be perfect! Have you ever thought of a journey to Italy??

I have noticed the same in Italy: Christmas trees are up earlier and earlier!! In any case I love the Christmas atmoshpere in the city ...

    1. I used to love visiting Italy, but sadly I haven't been in 25 years... I'll have to make an Italy trip happen some time!

I love the Christmas atmosphere in European cities too!

  15. Oh, I think we're going to become great friends. First we own the same wrap and now this coat. We probably bought it the same day. I ended up purchasing the petite, which I never do but it fit so much better and still plenty of room.
Your weekly menu sounds wonderful, especially the casserole. As for mine, so far its white bean chicken chili one night and tomato basil ravioli soup for another.
