Weekend Fun and Weekly Meals

We had a busy but fun weekend, filled with a dinner at our friends' house, a birthday party, and dinner out with other friends.

Our friends prepared an amazing meal for us.



Here are our contributions to the meal:


I forgot to mention another new food item in our kitchen in my last post – black rice. I picked up a big bag at Costco the other day and luckily we all like it, although the kid is still a bit suspicious. I think the color is really throwing him off. I love it especially in carrot soup as it adds such a nice pop of color.



The kid also spent plenty of time getting comfortable in our bed…


Weekly Meals

Meal 1: Spinach turkey burgers with roasted green beans. I’ll combine the turkey with chopped spinach, onion, garlic, a little sesame oil, salt, and pepper and bake the burgers in the oven for about 20 minutes. (I like to make the burgers rather small).
Meal 2: Carrot soup with black rice. I’ll sauté the carrots with onions, garlic, and celery and season the veggies with salt, pepper, and curry. I’ll add vegetable stock and cook everything for about 20 minutes and then puree it with my immersion blender.
Meal 3: Baked cod with a salad. I’ll coat the cod with lemon juice, olive oil, salt and pepper and bake it in the oven for about 15 minutes.
Meal 4: Veggie stir fry.
Meal 5: Leftovers and refrigerator finds.

  3. I've never had black rice but I do have some in my pantry I need to make. Do you add anything special to yours?

    1. I cook it in my rice cooker, like brown rice. I usually eat it plain. My husband likes to add soy sauce, rice vinegar, and sesame oil to his.

    I've never tried black rice (except maybe in some kind of rice medley?), but I am intrigued! I've never had rice I didn't like :)
    The kiddo is so cute snuggled up in your bed!

  6. I love wild rice! I have never tried black rice. My weekend highlight was for sure cooking and eating dinner Sunday night with Tyler.

    I like rice,especiality with onions(gedämft)and much Curcuma and also Curry.Black rice i like it also.Carrot soap with black rice a very good idea.

    Your menu looks amazing and so easy too. I haven't planned this weeks meals yet - have to find out what hubbies travel schedule is and go from there.

    We had some incredible food over the weekend and I have two new recipes to post.

    I saw that black rice at Costco but didn't buy it as I have so much rice here right now. Good to know you like it. Thanks for the review.

    The highlight of the weekend for me was getting to walk on my treadmill a little!

  10. Oh my goodness, that's a pretty incredible spread your friends had! I can't think of anything healthier (and tastier!) than fresh fish, fruits, and veggies. Isn't black rice delicious? I like to mix it with brown or red rice and cook it with turmeric and cardamom for an interesting color mix. I can see why the kid is suspicious - isn't rice just white? ;)

    I haven't been so good about menu planning at ALL lately ... Peter and I have mostly been throwing things together based on what we have. It would be nice to get back into it - more taste and less waste!

  12. OOOH...I saw the black rice last weekend, and was tempted but want to deplete the rice I have on hand first. You've sold me on it!! :) I LOVE the picture of your little man. Wow...I've been reading your blog since he was referred to as "the toddler". Have a wonderful week Andrea!

    I like black rice too because it's high in nutrient and so chewy! unfortunately it's so expensive so i rarely buy it.
    I like brown rice in general, plain or in stir-fries.

    menu this week for lunch: salad with shredded green salsa chicken and roasted veggies.

  16. Is that first dish on the left hand corner chopino?? Looks delicious whatever it is! Love any kind of rice, and I am lucky that my rice maker makes perfect grains - from couscous, to basmati rice, etc., just as long as I have the right water/grain ratio - just hit "cook" and I walk away!

  19. Meals look & sound delish!!! I am not a rice fan PLUS my tummy does not either ;) I used to eat it more when I was younger but not really anymore even though I do like the more whole grain ones...
