

I had planned to post the recipe for the chicken cilantro dumplings by now, but there were no pictures, so I decided to do it another time. I basically followed this recipe for mandu (that hubby made with the “then still a toddler” last year), but I used ground, organic chicken instead of the beef and pork, and I also added cilantro and adjusted the other ingredients slightly. I didn’t make the dumplings with the kid, but looking at the pics on hubby’s blog made me realize that we’ll have to do it again as a family! Here are three of the many pics he posted last year…



On to this week’s meals:
Meal 1: Black bean quesadillas with guacamole and a salad
Meal 2: Veggie tofu stir fry and brown rice
Meal 3: Quinoa with roasted veggies, topped with poached eggs
Meal 4: Pureed vegetable soup
Meal 5: Leftovers and “refrigerator finds”
Now on to my weekly exercise. I took four barre classes last week, and they were all very tough and great workouts (I had several Groupons, etc., which made them more affordable). But I know that I have to focus a bit more on high intensity cardio. I did an interval workout on the elliptical, and I ended up feeling very nauseous afterward. I definitely want to increase my cardio fitness in the next few weeks. I also want to do some more workouts with heavier free weights. So here are my workout plans:
- 1 barre class
- 2 weight sessions
- 2 HIIT workouts
- Longer cardio (hope I’ll be able to fit a long hike into my schedule)

I believe Korean dumplings are called mandu. Well, that's what we call them... :)

It turns out the highlight of my week and the best thing I ate are kind of the same thing. We went to my parents place and spent the afternoon cooking together. We made homemade everything. Shrimp dumplings with dipping sauce, rice noodles with lots of veg, black bean shrimp and orange chicken. And.......(drum roll please) kale chips! We have only recently been able to get kale in my town and we are crazy over it :)

Great idea to include "refrigerator finds" into the menu. After all the cooking all week there is bound to be some goodies to eat up.
The weekend highlight was our 10 mile hike.
The best thing I had to eat last week is a tough one but a new recipe I tried is at the top of the list.

DeleteI guess you're halfway in to your week by now, but it sounds like a good one! We had a fairly relaxing weekend, and enjoyed a round of mini golf which was fun-sadly, I'm blanking on what we ate...This Tuesday though I made a yummy kale salad with pasta on the side which was so good, I'm planning to create a kale and pasta salad dish out of it, and hope to have it on the blog next week. DeleteOk, I seriously have no highlight from last weekend. I wish I could say this one will be better but I think my hubby will be working. At least we are on vacation next week. The best thing I ate last week was probably Thai veggie curry. It was spicier than I expected, but really good. I guess that was the highlight because that was Friday night dinner. Your meals sound great! Since I had meetings most nights this week I didn't plan anything. We just made little things that we had around the house and used frozen meals. Next week will be lots of eating out since we will be in Sapporo for the snow festival.
