Fall Scenes and Weekly Meals

On Sunday, we spent a few hours at Gilroy Gardens, which is decorated for fall and Halloween:

It was lots of fun, but now on to our meals this week:

Weekly Meals

I’ll be doing more clearing out of the freezer this week.

Meal 1: Kimchi stew (frozen leftovers)
Meal 2: Dumpling/veggie soup (some more homemade dumplings in the freezer that need to be used up)
Meal 3: Gina’s Butternut squash mac & cheese (Can’t wait to try this!), tomato salad
Meal 4: Spaghetti and meatballs (the toddler has been asking for this for a while now) and a green salad
Meal 5: CrockPot Roasted Cauliflower Soup with Curry and Honey (sounds very interesting!)

Questions: What was the highlight of your weekend? What’s on your menu this week?

Be well,
Andrea

  2. Hi Andrea! It sounds like you have a Korean significant other. My husband is Korean too. All our kids a mix of Korean, Polish, Greek, and German. :D

  3. That looks so great, I can't wait for fall to arrive because it's way too hot for this time of year here. We have a huge mosquito problem here because of that.

  4. I actually made a meal plan this week! It's posted on my FB page. Currently, I have a vegetable & chickpea curry in my crock pot... YUM!

The toddler doesn't look too sure of that witch behind him in the one photo! ;)

  6. I loved going to places like that with Hannah when she was little. Time flies!

I made a delicious Italian sausage cheese tortellini soup I will post tomorrow - and I am going to be making a pumpkin baked oatmeal this week - although our temps will be in the 70s this week!

  9. I live in farm country and there is a local farm that does fun things like this for the kids - corn maze and all. I can't wait to take my nephew. I'm glad your son had a good time. :)

  10. I absolutely love it when places and businesses get into the fall and Halloween spirit! That looks like fun! This is my favorite time of year, for sure. That roasted cauliflower soup sounds delicious!

  11. When I was a kid I used to LOVE going to fall displays, and doing hay ride and looking for pumpkins and drinking apple cider, the works! Fall is my favorite season, by far.

Please let me know how the Mac and Cheese turns out! Nick and I loved it. We actually used Dreamfields pasta (with only 5 digestible carbs..I guess) but I couldn't say the name of the brand on my blog. Enjoy!!
