Weekend Fun and Food

On Friday, we got another CSA box. Here is what we got:


  • Apples
  • Strawberries
  • Grapefruit
  • Oranges
  • Zucchini
  • Broccoli
  • Fava beans – I got introduced to cooking fava beans last year when they showed up in my CSA box. After doing some research, I learned that they have to be peeled twice. That’s what I did, and they turned out great. I’ll use my fava bean recipe from last year to prepare these.
  • Peppers
  • Potatoes
  • Cilantro
  • Lettuce
On Saturday evening, we attended a wedding of one of hubby’s cousins. It was a beautiful wedding with lots of room for the toddler to run around; he seemed to have a never-ending amount of energy that night... The only problem was that it was an outdoor wedding, and it was quite chilly. I’m really glad hubby convinced me to wear my coat over my dress. I ended up never taking the coat off, and I was still cold all night…

I indulged in a bit too much food at the wedding, so I wanted something fresh and healthy for lunch on Sunday. I made a simple TLC (Tomato/lentil/cilantro) salad.


TLC (Tomato/Lentil/Cilantro) Salad

Ingredients
  • Cooked lentils
  • Grape tomatoes, cut in half
  • Cilantro
  • Salt
  • Pepper
  • Olive oil
  • Lots of lemon juice
Mix all ingredients and enjoy!

  3. I'm in an outdoor wedding this weekend, and I'm pretty worried about being cold the entire time!!! The highlight of my weekend was attending the bachelorette party from said wedding. :)

  4. Great CSA box! Love the idea of a TLC salad - I STILL haven't cooked with lentils! my weekend?? I dunno - we had a full, fun one - I can say the best eat was my new naan breakfast pizza!

  5. Oh my that salad looks amazing. I have to try this. Right now I am in a food rut, so I have yet to eat and be wowed. I am thinking that will change after I try the TLC salad.

    I need to make the recipe for TLC salad. I love lentils but for some reason never make them. This would be perfect for lunch!

    The best thing I ate was a roasted chili omelette at a brunch with some friends!

  10. I really enjoy seeing what you get in your CSA box. I had Fava beans for the first time last night at a friends house. They had come in their CSA box as well. I really liked the buttery flavor.

    The best thing I ate this weekend was...my homemade ice cream, and a lemon bar that Nick's mom made. Yes, I apparently have a sweet tooth!

  13. Your lentil salad is sort of like tabouli but different!

    I am going to add this to my list of recipes I want to try next week (must go shopping now)

    It looks refreshing and filling. PERFECT.

  15. The weather has been crazy. Sunshine, then hail! Go figure. A gym colleague is getting married in three weeks in Tahoe. Yes, outdoors. And there was just snow there this weekend. Crazy! ;)

  18. What a gorgeous wedding! I made a cold salad this weekend - asparagus, tomatoes, bell peppers, onion...and it just had a red wine vinegar and olive oil dressing. So good!

  19. What a pretty wedding. Weddings are so much fun. You are just getting started with your toddler. My son is getting married next year. It goes by too fast. I have a whole bag of lentils waiting for me in the pantry. I think I'll add some avocado to your salad and make a meal of it. Yum!
