Butternut Squash Triangoli and a Salad = A Delicious Weekend Lunch

A few weeks ago, I picked up some butternut squash triangoli from Trader Joe’s for the first time. Hubby, the toddler, and I have been in love with them ever since. They are sweeter than “usual” pasta and taste great simply boiled.


To put together a quick weekend lunch, I boiled the pasta and then coated the boiled triangoli with a little olive oil and Parmesan cheese. I served the pasta with a tomato cucumber salad. I think next time, I will serve the pasta with a green salad with a nice, acidic dressing and some candied walnuts and maybe some dried cranberries.


We also spent some time at the park. The weather is beautiful today, but it’s supposed to rain again tomorrow and next week, so we wanted to take full advantage of the park.


Questions: Do you have any recent food finds? What is your favorite type of pasta? As a kid, I was obsessed with ravioli - the kind in a can (which my mom refused to buy for me…). These days, I love spaghetti, but I also enjoy a nice filled pasta, like ravioli, once in a while. What have you been up to so far this weekend?
