Healthy Fake Baked Potatoes And Giveaway Winner

Yesterday’s lunch was so simple, yet so good. I fake baked (= microwaved) a couple of potatoes and then served the potatoes with leftover Anytime Anything Salsa and Doctored Up Greek Yogurt.

Doctored Up Greek Yogurt
  • Fat-free Greek Yogurt
  • Green Onions, chopped
  • 1 shallot, finely chopped
  • Cilantro, chopped
  • Juice of 1/2 small lemon
  • Salt
  • Pepper

Hubby actually asked, “What did you do to make the yogurt taste like sour cream?” Honestly, I don’t think Greek yogurt stands a chance against sour cream in a side-by-side comparison. But, when you just eat it seasoned without tasting sour cream at the same time, it’s absolutely delicious and very healthy.
I sprinkled a bit of shredded cheese on each potato.


And then added some of the leftover salsa.


followed by the Doctored Up Greek Yogurt.


A quick, healthy, and satisfying lunch!
