One of our outings was to a children’s museum; here are some of the things we did:
Salmon Salad
- 1 can wild salmon
- 1/4 onion, finely chopped (the onion was quite “potent.” If you are not an onion fan, it’s probably better to omit it…)
- 6 celery stalks, diced (yes, it was a lot of celery, but I loved it)
- 1 tablespoon capers
- Juice of one lemon
- 1 – 2 tablespoons Wasabi mayonnaise (I used 1 tablespoon, but it could have maybe used a bit more; if you like a milder taste, mixing regular mayonnaise and wasabi mayonnaise would be a good idea.)
- Radicchio leaves
Served in radicchio leaves.
Questions: How was your weekend? What was the best thing you ate? I think the best thing I ate was a banana with some Nutella… It was soooo good!

We have a wonderful Children's Museum here in Indianapolis and we spent lots of time there with our girls when they were young.

The children's museum looks like so much fun!!! The best thing I ate this weekend? Authentic Chinese in a hole-in-the-wall restaurant in Philadelphia's Chinatown!

Your son is precious. I adore the yellow raincoat and Bob the Builder! My weekend was ok, I cooked a whole lot. The best thing I ate was definitely the tortillas I made yesterday.

I think that is great that you went to the Children's museum for a nice indoor day with all that rain and chilly temps. Great idea. The best thing I ate was probably the quinoa I made for a Thanksgiving party. It was a low key food weekend for me.

ReplyDeleteWe are having crazy weather too - we had tornado watches, the temp this morning was 68 and by tomorrow morning the temps will only be 30 - so crazy!

ReplyDeleteThanks for posting that recipe I just happened to pick up a can of salmon at the store the other day and was thinking about salmon patties. But I also just bought some radicchio so now I have options!
The best thing I ate over the weekend was the Hungarian Beef Stew a friend of ours made. I had to ask for the recipe so I can make it for us again. It was rich and full of flavor. Sigh. I love comfort food.
omygoodness, just the words "salmon salad" makes me a kid again. my mom made this A LOT, it was awesome. LOVE the idea of wasabi and radicchio leaves, i might have to steal that. :)

Your salmon salad looks really tasty. I like that you used wasabi mayo. Yum! I enjoyed some kid free time at Costco with Mom on Sunday. That was nice.

ReplyDeleteThe best thing I ate this weekend? Mmm, may have been the hamachi shooters at Alexander's Steakhouse. A signature dish there that you just can't have enough of.
