Arugula Salad With Orange Muscat Champagne Vinaigrette

I made a really simple yet very tasty salad with the arugula we got in our CSA box. It wasn’t the prettiest salad, but it was so good that I wanted to document it. The arugula was a lot bigger and a bit milder than the arugula I usually buy. And it was VERY dirty. It was definitely necessary to wash each leaf separately on both sides. But, again, it was worth it.

  • Tomato
  • Olive oil
  • Trader Joe’s Orange Muscat Champagne Vinegar – I read about this vinegar on Lara’s blog. She posted a recipe for a “liquid gold” salad dressing that sounds amazing. I still have to make it, however, as I haven’t found the fig jam yet. I believe it is sold at Whole Foods, but WF grocery trips are bit “dangerous,” so I’m limiting them at the moment. Regardless, the vinegar was amazing in the simple vinaigrette…
