Several weeks ago I was sent some samples of Bertolli pasta sauce through the Foodbuzz Tastemaker program. For weeks the sauce was sitting on my kitchen counter, and I was thinking of making something “great” with it. But somehow, I never got around to planning something “great.”
Today when I was just getting ready to “throw together lunch,” I saw the sauce yet again and decided to use it for a very fast and simple dish. While the dish is extremely simple and fast, it is also quite delicious. I used the Bertolli Arrabbiata sauce, and it had a nice spiciness and went perfectly with the baby peppers and shrimp I paired it with.
Ingredients
- 10 baby sweet peppers, sliced
- 1 green garlic stalk, sliced
- Olive oil
- Cooked, leftover garlic shrimp
- 1 jar Bertolli Arrabbiata sauce
- Juice of 1 lemon
- Brown rice spaghetti
- Cilantro
What I Did
- I started by sautéing the peppers and garlic in some olive oil.
- Then I added the pasta sauce and simmered everything for about 12 minutes.
- In the meantime, I boiled the pasta.
- When the pasta was almost done, I took the pasta sauce off the heat and added the leftover shrimp to heat them through.
- Then, I squeezed the juice of one lemon into the sauce.
- Finally, I tossed the cooked pasta with the sauce and added the cilantro.
Yes, this was truly fast food and a great way to use the sauce! The teenager and I each had a portion for lunch, and we both really liked it. And there is plenty left for the “boys” for dinner tonight… I love it when I don’t have to worry about dinner in the late afternoon… :-)

Nice use of the sauce. I like the Four Cheese Rosa more than the tomato. I guess because it reminded me of Alfredo sauce. :)

ReplyDeleteI make a really quick pasta dish that my girlfriend dubbed, "The poor man's special" beacuse she created it in college. Whole wheat pasta tossed with some ICBINBL, minced garlic, Italian seasoning, parmesan cheese and crushed red pepper. I'll top it with a Morningstar Tomato & Basil Burger. Yum, yum, yum!!

ReplyDeleteMy fave Indian fast food has to be bhel puri, in Singapore it was the quick stir fry noodles,hot off the wok on the roadside, in the US it would definitely be the hot dog!!

Cilantro in a pasta dish - how creative! I have some baby bell peppers in the fridge leftover from salads this week and I think adding them to a red sauce is a great idea!

ReplyDeleteI think nothing beats pasta for an easy weeknight dinner. When I'm pressed for time, I always reach for noodles -- either Italian or Asian -- to whip up something fast, effortless and delicious.

ReplyDeleteSo darn pretty Andrea! Pasta is always a great "fast" dish. I had leftover noodle shrimp soup that I made the other day. My "fast" food is probably just pasta of some sort or to make eggs and toast.

ReplyDeleteHaven't had lunch yet today but yesterday was a mix that I really enjoyed. I heated up a can of organic pinto beans, added a splash of white wine, some garlic, salt and pepper, chopped celery, onions and tomatoes, some turkey bacon and a boullion cube! Sounds random but it came out delicious.

I think your lunch looks great! I still have yet to try the cheese sauce from Bertolli. My favorite "fast food" is grilled ham and cheese.

ReplyDeleteOh I love this meal- so colorful, fresh, and delicious! I'm a big fan of fast yet tasty ideas! I usually make a quick stir fry or even oatmeal when I'm pressed for time. I also find breakfast foods to work well any time of day because they are usually quick to prepare and are my favorite foods!

you made an EXCELLENT point re linkbacks and how they can disappear, i.e if the blog who has the orig recipe disappears, then all crashes and burns with the blog. That is an excellent point. I am going to mention this. But also tell readers that if you cant live without a recipe, write it on a notecard and stash it under your mattress :)

I've been eating horribly...too many girl scout cookies, fried foods, etc...but for lunch, I eat fairly well in the company cafeteria - lots of fresh greens for salads.

Nice,lunch and dinner all in one!! this sounds so good. I love that you added shrimp. My brother has been eating shrimp since he was young, it's the one fish he tells me he eats when I ask him "have you had fish this week??" haha. Shrimp really is so good, especially in pasta dishes.
ReplyDeleteFor lunch yesterday I had spaghetti squash with ground turkey and TJs spaghetti squash, with fresh spinach on top, and nutritional yeast. It was deeeelicious! And quite simple (took 5 minutes).

ReplyDeleteMy favorite quick meals or anything incorporating leftovers ;) I made brown fried rice last weekend and had it for lunch for the first few days of the week. I think I might do that again today!
